Pecan Turtle Bars

These taste phenomenal! I had intended to follow the recipe exactly; however, when I got to the step of sprinkling on the chocolate chips, I found that I did have to use 2 cups of chocolate chips rather than 1 in order to cover the entire surface area. I also baked these in a 9X9 square springform pan. This resulted in a thicker cookie crust which was crunchy and delicious. Also, with the springform pan, it was super easy to slide the entire finished product onto a cutting board!

Gingerbread Men Cookies

This recipe is delicious and the dough was easy to work with! To avoid rolling out the dough too many times and inevitably adding more flour, I separated the dough into 3 flattened disks before wrapping and refrigerating them. After an hour, I took the dough out of the fridge and rolled out each disk until they were the right thickness (for me, about half a centimeter). I then re-wrapped each disk in plastic and refrigerated them overnight. The next day, I simply unwrapped the disks, placed them onto my floured counter and cut out the gingerbread men!

Almond Shortbread I

This recipe is very tasty. As stated by previous reviewers, this dough does get rock hard! But you just need to work the dough a bit with your hands to warm it up. I rolled my dough to about 1/4 inch thickness and used a snowman shaped cookie cutter to cut out the cookies. Each time I gathered up the dough, I rolled it out to 1/4 inch thickness and stuck it in the freezer for 5-10 minutes. It was the perfect consistency for cutting out my snowmen. I also baked the cookies at 325 degrees for 15 minutes. (My cookie cutter was 5 inches long) The cookies turned out perfectly!
