Great meal! I made it as directed, except that I used chicken broth in place of the vegetable broth. The recipe was easy and delicious, and spicy. The curry powder can be garam masala or regular curry powder. Definitely add some salt.

Honey Wheat Bread I

Excellent! It is truly delicate and soft. My variation is to use olive oil in place of the shortening and all wheat flour. I usually need at least another 1/2 cup of flour to get the right texture. I have also added about 1/2 cup of oatmeal. Really good!

Papa Drexler's Bavarian Pretzels

Excellent soft pretzels! The second time I made them, I used whole wheat flour for the last 2 cups, and used olive oil instead of the melted butter. I used the dough hook on my mixer for the kneading. The only problem I had is that the finished pretzels stuck to the pan pretty badly, even with lots of oil.

Cauliflower Couscous

We love it! I have made this cauliflower recipe many times in a row, and I am not tired of it yet! The only thing I do differently from the original recipe is to use olive oil instead of butter. I add more olive oil as necessary throughout the cooking time. I probably add more than 9 Kalamata olives, too!

Kale and Quinoa Salad

Delicious and nutritious! Washed and ready baby kale is now available, making this recipe very easy. I substituted golden raisins for the currants and grated fresh Parmesan cheese for the feta. The lemony dressing and the pecans are perfect.

Pumpkin Custard with a Kick

Excellent! Quite spicy for a dessert, but really in my style. I used other people's suggestions: I mixed it all in a blender, making it easy to pour; and, I used unsweetened applesauce for lack of OJ. I added only one thing, about 1/8 t of salt, so that the custard would not taste flat. Perfect!

Oatmeal-Currant Scones

Yum, very tender! I used 2 c whole wheat pastry flour and 1 c white flour for this recipe. I added walnuts. I followed the advice from another reviewer who noted that I don't need to grind the oats. These scones are not very sweet at all, so always include the currants!

Exotic Brinjal (Spicy Eggplant)

Very tasty; I liked the blend of all the spices. I would definitely double the tomatoes (and I used canned, diced) and the coconut milk. Maybe to make it a bit more tangy, I would add some vinegar or even more tomatoes. I made this again, and this time used almond milk in place of the coconut milk, and it was fine. Very good.

Jamie's Minestrone

Loved this soup! I skipped the pasta and added an extra can of (white) kidney beans. I also used a whole, 9-oz bag of spinach, stirring it in at the last two minutes. One more thing: I used 2 cans of diced tomatoes, including one with chiles, as the tomato sauce. The Parmesan cheese in our bowls was the finishing touch! Very healthful and easy dinner.

Simple Whole Wheat Bread

Excellent and easy. This bread makes GREAT toast! I used unsweetened applesauce in place of the oil/butter, and cut in half both of the honey additions. Perfect!
