Apple Pie Muffins

Best muffins ever. However, you must follow the instructions. Don't make substitutes for butter, type of flour, spices or buttermilk. These were fluffy and moist...the only change I made was to halve the topping--that makes just enough for 12 muffins.

Only a few things that can be done with rhubarb, most of them desserts. Rhubarb mushy, but very tasty. Didn't have garlic powder, so used minced garlic, about 2T. I used Thomson raisins, but dried cherries or cranberries could also be used. Just keep an eye on it so it doesn't burn to the bottom of the pot.

Quinoa Almond Pilaf

I really liked this and will use the recipe again. However if you aren't a fan of black pepper, you may find 1/8 t. too much. Next time, I'll add only a dash of pepper.

Mayo Chicken

This was surprisingly good. I was just looking for something easy, and it was. Instead of fresh rosemary, I powdered some dried rosemary in the blender and put the garlic through a press. I didn't apply the mayonnaise mixture too thickly, so it was not too rich.

Green Monster Smoothie

I've added another T of peanut butter and a scoop of chocolate protein powder. You can also use parsley which has a milder flavour. (My parakeets like the stems, so I have to use up the rest!)

Baked Omelet Roll

Yeah, this was a little disappointing. 450 degrees baked them in half the time, they set up nicely but they didn't roll up for me, even following others' suggestions. With a half cup of flour, they were a cross b/t pancakes and eggs, and the taste wasn't there. I suppose if you'd add onions, green pepper, ham, bacon, etc. to the cheese it would be better, but I wouldn't put so much flour in if I made it again, which I probably won't be doing.

Plum Flummery

Turned out great.. our plums were mushy and sweet and needed to be used. The first time I made this, I left the skins on, which gives the mousse a lovely mauve colour, however, they needed to be strained out and that was a lot of work. So, seeing that they are so soft, I was able to remove the skins before cooking. To get the colour, I poured a half cup of hot water over the skins/pits and drained it off and after sitting for a half hour. I used this to dissolve the gelatin. My husband is crazy about this dessert. I'm glad for a way to use up so many plums at one time!

This is SO easy to make and it also makes a good snack or put in a cup to have as a hot drink. I always puree it before I stir the hot milk in. And add basil.

Italian Meatloaf in Zucchini Boats

I've been making these for a while and find that you have to play around with this recipe in order to make it to your taste. For one thing, scoop out as much of the zucchini as you can... ok, it's not wasting if you have a TON of big zucchini's to use up! Then bake and season the "boats" first for -- ummmm, maybe half hour or more in order to get it cooked and dried out a little, as it tends to be watery if you don't. Cook the beef/pork in your frying pan ahead of time and add the things you'd like--green pepper, onion, garlic, seasonings, tomatoes or tomato sauce, etc. and taste it first so it's more to your taste. When you stuff it, leave the cheese off until the last 10 or 15 minutes so it doesn't burn.

Zucchini Brownies

After reading a number of reviews, I was hesitant. But having a garden full of Zs I had to do something. Yes, the batter is dry with just the oil. Do not add eggs, I'm sure it won't be chewy like you'd like if you do that. I had previously frozen a large Z after shredding it (small grater) in my food processor. When it thawed, I squeezed out most of the water and added one cup of Z, which was packed down. It made more of a dough than a batter. You'll need to mix this with your fingers. Anyway, these came out great and my Hb came upstairs to make a point of saying so. I ate four and didn't feel like I'd eaten too much sweet stuff. Didn't need frosting. Yes, strands of Z can be seen, but I don't care. I love it.
