BBQ Chicken Pizza II

Reviewed: May 13, 2002
I really wasn't too sure that I'd like the taste of this, but I was curious so I made it. My husband and I were pleasantly surprised. Even our 1-year-old ate a decent amount of it. I actually made two mini pizzas and didn't really follow the quantities specified in the recipe. I just used the amount of sauce, peppers, onion, chicken and cheese that seemed appropriate. The only differences I made were the facts that I didn't have a red onion or monteray jack cheese, so I substituted white onion and used mozzarella and cheddar shredded cheese. Quite easy! Thanks!

Bread Machine Swedish Coffee Bread

Reviewed: Jul. 3, 2008
For flavor, I give this 5 stars, but for it actually turned out, I'd give it 4, but I gave it 5 because I think it was my error more than anything. Not as light and fluffy as I would like. The bread ended up being more dense. I don't think I gave it enough time to rise though. I don't really make bread, so an estimated rising time for this recipe would have been nice. I also overcooked it a bit so the bottom and top were hard and very brown. My errors. May take less time than stated. I think this is the perfect amount of cardamom. You need to like the taste to really enjoy this bread! I added about a teaspoon of cinnamon on top of the cardamom since I enjoy those flavors together. As for the pearl sugar. That is very Swedish and does go with the bread. You can find it decently priced at Ikea in their food market. I also love cardamom bread with just granulated sugar on top, granulated sugar and cinnamon together or a light icing made with powdered sugar, milk, a little butter and almond extract. Sprinkle shaved almonds on top. Mmmmm... Now that is a treat! So if you don't have pearl sugar on hand, one of those toppings will work!

Detroit Hot Honey Wings

Reviewed: May 12, 2008
We loved these. I did half the amount of hot sauce (Frank's) because we have young children that are not fans of spicy things (yet!) and they still had a very small bite to them that the kids were fine with. My husband and I who like spicy then dipped our wings in additional hot sauce and blue cheese dressing. I really wasn't sure how I'd feel about the honey and my husband who is a huge hot wing fan seemed just a little skeptical, but we were all pleased with the results. A nice change from typical hot wings!

Quick Classic Gazpacho

Reviewed: Nov. 21, 2005
This is a good base recipe. I adapted a bit for items I didn't have and items I wanted more of. I will continue to use this as abase though as it is simple and tasty.

Scrambled Potatoes

Reviewed: Oct. 14, 2002
Not the absolute best thing we've ever had, but it was fun since it combined out usual once a week breakfast items (scrambled eggs w/cheese, bacon & hashbrowns) into one dish. I also added a little onion and wish I had actually added more. I'd make it again, but add onion and maybe a few other items to give it more flavor.

Norwegian Krumkake

Great easy to use recipe. Added a little Cardamom for an ethnic taste. Liked that this recipe used milk rather than cream and you couldn't taste a difference.

No Drip Ice Pops

These were okay. My son liked them just fine, but I wouldn't want to eat them. I have since motified the recipe to be more healthy.

Simple Cabbage Slaw

Reviewed: Jun. 18, 2008
Seemed to be missing something. Although having no oil is healthy, I would have added a little olive oil. Maybe some chopped onion of any kind too. I added some honey as another reviewer had done and I liked the results of that. This recipe made as stated though isn't the best and there are other similar recipes on this site that are much better,

Roasted Veggies with Couscous

Reviewed: Jun. 18, 2002
This was pretty good. I actually cut the veggies up really small and mixed them in with the couscous. Thought maybe I could get my son to eat it, but no such luck. Made a very nice side dish for my husband and I though.

I guess I expected this soup to be thicker, but all in all it was pretty good.

Zucchini Bread

Reviewed: Oct. 14, 2010
One of the best zucchini bread recipes I've had. I did decrease the sugar a bit (still plenty sweet) and substituted apple sauce for half of the oil and used 1/4 whole wheat flour. Often times when I do this, quick breads can be a little dry, but this was still fabulous. Oh and I added a teaspoon or two of vanilla extract.

Prosciutto Parmesan Pasta

Reviewed: Sep. 16, 2010
Great basic recipe you can play with. I had no cream and don't care much for peas, so I used jarred alfredo sauce and sauteed mushrooms and asparagus. Yum! I love prosciutto and this is a great recipe to use it in!

Not quite as good as I expected it to be, but I will make it again. Seemed to have less flavor than I expected. My husband and I enjoyed it though.

Easy Cheesecake Pie

This was pretty good. Definitely not the best cheesecake I've ever had by any means, but the quickness made up for it. I didn't make the crust as I used a pre-made one.

Rhubarb Strawberry Crunch

Reviewed: May 23, 2002
This was awesome! I made it for company and everyone practically licked their plates clean (we served it with vanilla ice cream). We used rhubarb from our backyard and fresh strawberies. I did add almost 2 more cups of strawberries and a little more rhubarb because of what others said in the other reviews. Also cut down on the flour that was mixed in with the fruit and with the topping.

Super Easy Fruit Dip

Reviewed: Apr. 30, 2008
Loved this. Served it at a shower and a few people asked what was in it because they liked how light it was. I saw many people get seconds of it so I'm assuming it was a hit. I loved it on strawberries. I used half a container of creamy cool whip and a 6oz container of thick vanilla yogurt.
