Six Can Chicken Tortilla Soup

Reviewed: Apr. 25, 2002
This recipe, as others have said, is a great starter recipe. I would think that it would be a little blah without adding something extra. We added onion and a little taco seasoning mix, plus used fresh chicken (not canned). I served it with shredded cheddar cheese and tortilla chips and everyone, including my 16-month-old, liked it. This recipe is so easy and quick! Definitely a keeper especially for that factor!

Great recipe. We too added chicken to make it a main meal dish. A nice change of pace.

Cocktail Meatballs I

Reviewed: May 1, 2002
I loved the meatballs, but wasn't overly thrilled with the sauce (although my husband loved both). The sauce reminded me of sloppy joes, which I don't care for, so I think that's why. I loved how easy the meatballs were to make though, so I've been using that part of the recipe with another recipe I have for barbeque sauce.

Seven Layer Tortilla Pie

Reviewed: May 12, 2002
Good, but not as good as I thought it would be. Prep time is a lot longer than recipe says. I think I'll still make it in the future, but with a few adjustments.

BBQ Chicken Pizza II

Reviewed: May 13, 2002
I really wasn't too sure that I'd like the taste of this, but I was curious so I made it. My husband and I were pleasantly surprised. Even our 1-year-old ate a decent amount of it. I actually made two mini pizzas and didn't really follow the quantities specified in the recipe. I just used the amount of sauce, peppers, onion, chicken and cheese that seemed appropriate. The only differences I made were the facts that I didn't have a red onion or monteray jack cheese, so I substituted white onion and used mozzarella and cheddar shredded cheese. Quite easy! Thanks!

Easy Tuna Casserole

Reviewed: May 21, 2002
Really, I'm surprised this recipe has gotten as good of reviews as it has. I was not very impressed. Quite blah and very dry. If it wasn't for the french fried onions, it would have been worse. It was very quick though. If I were to make it again, I'd make a lot of adjustments.

Doreen's Steak Marinade

Reviewed: May 21, 2002
Very good. I rarely eat let alone make any kind of red meat, but my husband likes it so I gave this recipe a try. The steak (cooked on a gas grill) had a nice flavor and was very moist. I will definitely be using this recipe again.

This was good. I let it marinade overnight and the marinade taste was moderate. I will be using this recipe again as it is a nice change of pace.

Yummy Honey Chicken Kabobs

We loved this recipe!!! Chicken and veggies tasted terrific as we cooked them on the bbq grill. My 1-year-old ate these right up! Will definitely be using this recipe often!

Rhubarb Strawberry Crunch

Reviewed: May 23, 2002
This was awesome! I made it for company and everyone practically licked their plates clean (we served it with vanilla ice cream). We used rhubarb from our backyard and fresh strawberies. I did add almost 2 more cups of strawberries and a little more rhubarb because of what others said in the other reviews. Also cut down on the flour that was mixed in with the fruit and with the topping.

Teriyaki Marinade

Reviewed: May 23, 2002
Very good. I used half teriyaki sauce and half soy sauce for the soy sauce in the recipe and marinated chicken in it over night. We grilled it on the BBQ grill. Great flavor and guests seemed impressed.

Marinated Veggies

Reviewed: May 23, 2002
I personally thought this marinade contained too much oil and lacked flavor. My husband couldn't even taste it and I had marinated it over the time specified. I guess I may use this recipe as a "base" recipe, but I will definitely reduce the oil and experiment with different seasonings in the future.

Rhubarb Crunch

Reviewed: May 28, 2002
Very good.... I had made a recipe like this except with strawberries and rhubarb and it turned out so good that I wanted to make it again, except I had no more strawberries so I tried this recipe. Really, it was almost as tasty as the one with strawberries. My husband had his doubts since it was rhubarb only, but was pleasantly surprised. My mother-in-law, father-in-law and sister-in-law also seemed very impressed.

Roasted Veggies with Couscous

Reviewed: Jun. 18, 2002
This was pretty good. I actually cut the veggies up really small and mixed them in with the couscous. Thought maybe I could get my son to eat it, but no such luck. Made a very nice side dish for my husband and I though.

Easy Cheesecake Pie

This was pretty good. Definitely not the best cheesecake I've ever had by any means, but the quickness made up for it. I didn't make the crust as I used a pre-made one.
