Sloppy Joes II

Definitely 5 stars for Sloppy Joes. I am typically not a fan of them at all, but my brother-in-law used this recipe one night and I was amazed at the difference between these and the kind I'm usually served at functions. These definitely aren't as saucy as most, but that is a huge plus for me. Everyone else seemed to love these too. Red peppers were also used along with the green.

Easy Tilapia with Wine and Tomatoes

I didn't follow the exact recipe, but noticed the topping was similar to bruchetta so I made a simple batch of that which contained chopped tomatoes, fresh basil, garlic cloves, onion, olive oil and balsamic vinegar. I put the butter on the tilapia pieces as the recipe says along with the wine, which I cut down on a little as others had. I loved it! My husband thought it wasn't quite as flavorful as it could be, but his piece didn't have as much topping on it as mine. The more topping, the better! With my changes, I'd give it 5 stars, but I'm guessing it would be a little more blah without the changes. Excellent base recipe though!

California Cole Slaw

Loved this! So fresh tasting. Course having all organic ingredients from a nearby farm helped, I'm sure. Only difference is that I used a red onion instead of a white one. I also used a food processor for the cabbage and carrot and they ended up a little more minced than I would have liked.

Snow Cone Syrup II

Tasted good. Could really taste the sugar, but with snow cones that's not necessarily a bad thing. My husband wasn't thrilled about the consistency, but I'm not sure if he wanted it to be thicker or thinner? I'd make it again as it was cheap and easy though.

Zucchini Brownies

Good considering how much zucchini was in it. I was expecting more of a brownie taste with all the glowing reviews. Tasted more like chocolate zucchini bread to me. Everyone seemed to like it enough, but they didn't disappear the way real brownies would have. The kids didn't seem to notice, but chocolate is chocolate to them plus zucchini bread itself is a treat for them.

Hot Ham 'n' Cheese

Beefy Cheesy Pasta

Decent meal, but quite blah. I made as the recipe stated except used a combo of monterey/colby cheese and shrap cheddar as we rarely buy american cheese. Not sure if it's worth the time to make it again.

Savory Grilled Potatoes

Really good. I didn't have heavy duty foil so I doubled it, but the potatoes burned. Grill was too hot though. We rescued most of the potatoes and broiled them in the oven. I agree that you can't taste the mayo after they're cooked at all which is good since I'm not a fan!

Bread Machine Pizza Dough

I had never had luck making homemade pizza crust before. It either didn't taste very good or had a weird texture. This was awesome! Chewy with just the right amount of crisp and taste was great! We only had Corona Extra beer and only had time for it sit about a hour. Definitely not flat, but still fabulous results. We made BBQ Chicken Pizza on it.

Easy Mushroom Rice

I too used cream of mushroom soup. I also used beef broth made a bouillon cube and added half a packet of Lipton French Onion Soup/Dip Mix. I sauteed fresh mushrooms in the butter and added them to the mix. It was good, but way too salty and not quite creamy enough for me. I think the bouillon along with the dressing mix made it that way though. I'll have to play around with the recipe a little more, but it's so similar to a main dish I make (Chicken & Mushroom Wild Rice Casserole) that I'm not sure I'll be making it that much.

Sophie's Zucchini Bread

Great! I used 1/2 C whole wheat flour in place of 1/2 C of white. Next time I'll do 1 cup whole wheat flour. I also used half unsweetened applesauce for half the oil. Very moist! I probably used a little more than 3 C Zucchini and again, it was great! Kids were very happy!

Soft Oatmeal Cookies

Maybe I did something wrong, but these cookies turned out very flat for me. I rarely have ever had this problem baking cookies. Also, I like sweet cookies, but these were definitely too sweet for me. If I were to try these again, I'd definitely decrease the sugar. For now, I'm sticking with the recipe on the oatmeal box as I've never messed those up!

Bread Machine Swedish Coffee Bread

For flavor, I give this 5 stars, but for it actually turned out, I'd give it 4, but I gave it 5 because I think it was my error more than anything. Not as light and fluffy as I would like. The bread ended up being more dense. I don't think I gave it enough time to rise though. I don't really make bread, so an estimated rising time for this recipe would have been nice. I also overcooked it a bit so the bottom and top were hard and very brown. My errors. May take less time than stated. I think this is the perfect amount of cardamom. You need to like the taste to really enjoy this bread! I added about a teaspoon of cinnamon on top of the cardamom since I enjoy those flavors together. As for the pearl sugar. That is very Swedish and does go with the bread. You can find it decently priced at Ikea in their food market. I also love cardamom bread with just granulated sugar on top, granulated sugar and cinnamon together or a light icing made with powdered sugar, milk, a little butter and almond extract. Sprinkle shaved almonds on top. Mmmmm... Now that is a treat! So if you don't have pearl sugar on hand, one of those toppings will work!

Simple Cabbage Slaw

Seemed to be missing something. Although having no oil is healthy, I would have added a little olive oil. Maybe some chopped onion of any kind too. I added some honey as another reviewer had done and I liked the results of that. This recipe made as stated though isn't the best and there are other similar recipes on this site that are much better,

This was good, but it seemed to be lacking something. A little blah to me, I guess. I brought it to a potluck and everyone seemed to like it. I noticed a couple take seconds of just this, so I know it must have been good overall.

Simply Parmesan Chicken

Good, simple recipe. I use a similar recipe for making baked parmesan chicken, although soak the chicken in italian dressing instead of egg. I liked the way it turned out with the egg better. We used this chicken to have in caesar salad and it worked nicely. I will use this recipe again.
