Cream Of Chicken Soup

Good base for recipes in place of the usual Cream of Chicken Soup. I add some chicken broth or flavoring though. I also would never eat this alone as soup.

Zucchini Bread

One of the best zucchini bread recipes I've had. I did decrease the sugar a bit (still plenty sweet) and substituted apple sauce for half of the oil and used 1/4 whole wheat flour. Often times when I do this, quick breads can be a little dry, but this was still fabulous. Oh and I added a teaspoon or two of vanilla extract.

Prosciutto Parmesan Pasta

Great basic recipe you can play with. I had no cream and don't care much for peas, so I used jarred alfredo sauce and sauteed mushrooms and asparagus. Yum! I love prosciutto and this is a great recipe to use it in!

Great easy to use recipe. Added a little Cardamom for an ethnic taste. Liked that this recipe used milk rather than cream and you couldn't taste a difference.

Baked Salmon Fillets Dijon

Super, super easy. If it wasn't, I'd probably be giving it three stars as I liked it, but nothing to write home about. My husband loved it though. Only difference is I added a little honey mustard to the dijon and seasoned my own panko breadcrumbs. I will be making it again just because it was so simple and great for nights where we need something quick.

Norwegian Pancakes - Pannekaken

Although I would call these "Swedish" pancakes, they are definitely the best homemade ones I've ever had! For years I've infrequently bought mixes at various places to make these and they never turned out well. These taste just like a favorite restaurant's version. The recipe could not get any simpler also.

Easy Swedish Apple Pie

Loved this! Much simpler than messing around with a crust for traditional apple pie. Although traditional apple pie will still have its place, this is much easier and delicious. My husband was quite impressed as were all three kids (ages 7, 5 and 2). I did add half brown/half white sugar to the apples along with cinnamon. I made the topping with half brown/half white sugar also and added a little almond extract as another reviewer suggested. Making it again today to take to my brother and sister-in-law as they just moved to a new house so we'll see how they like it.

Balsamic Chicken and Fresh Mozzarella

Good, but not great. I used all fresh ingredients, but wasn't sure it tasted that great with the chicken. I made a similar recipe with Tilapia and liked that much better. Family felt the same as me.
