We really liked this recipe! I halved the butter and doubled the other seasoning and it turned out great! Baked at 350 for 10 min and then broiled on 400 degrees for 3 min each side.

Jamie's Cranberry Spinach Salad

Reviewed: Jun. 2, 2012
Fantastic salad! My husband and I loved it. Only deviations was that I toasted the almonds and sesame seeds in the oven for 10 min on 350 and I added crumbled bleu cheese. Thanks for my new salad favorite!!!

Clark's Quiche

Reviewed: Jan. 6, 2011
Very good. The taste was phonominal but next time I will add more eggs as it fell apart when scooping it out so it didn't hold that quiche texture. I will make it again though for sure!

Southwestern Turkey Casserole

Reviewed: Jan. 6, 2011
I followed the advice of other reviewers and used torn up flour tortillas (about 8 since that was all I had), used the Cream of Mushroom Soup and left out the Cream of Chicken, used light sour cream, added a can of Ro-tel tomatoes with chilis, added more cheese, added corn, added black beans, and finally added additional spices (cumin, chili powder, salt, and pepper) . We loved it and made 2 casseroles from it and I froze one to eat later. Thanks for the great recipe to use my leftover turkey!!

Deer Poppers

Reviewed: Jan. 3, 2011
These were great! My husband said these need to be made regularly from now on. I made them for a New Year's Day appetizer while watching NCAA Bowl games. I used a pack of Cubed Loin and marinated it in Dale's/Moore's sauce and a bottle of fat free italian dressing. I let it marinate for a couple of hours. I placed approx 2T of meat on a 1/2 slice of bacon and topped the meat with approx. 1/2T of cream cheese, then a slice of jalapeno (marinated jar kind). Wrapped the bacon around the meat mixture and secured it with a toothpick that I had soaked in water for 30 min. (Make sure to stretch the bacon as you wrap it to make it thin so it will crisp up well.) I placed them all on a baking sheet and I baked it in the oven at 400 for 20 min. I drained the liquid from my pan and then I put it back in the oven and broiled it for another 5 min to further crisp the bacon. After we sampled them we decided that the jalapeno makes it too spicy so we removed the jalapeno before eating the rest and the jalapeno left it a really good flavor but without the heat. Excellent!

Chocolate Cookie Cheesecake

Reviewed: Dec. 23, 2010
This was great!!! Used a 9" springform pan. For the crust, I used oreos with the cream scraped out, crushed and added about 6T butter instead of the 2T in the recipe b/c otherwise the crust wouldn't hold it's form. Used mini oreos for the center layer. Baked the cheesecake for 55 minutes b/c of my pan size. Also, I only used about 1/2 of the sour cream mixture on top and 1/2 of the melted chocolate on top since my pan was smaller. It was fabulous and froze well after baking it since I didn't need it for my holiday party for another week. Pulled it out to thaw in the fridge the day before my party. Everyone wanted the recipe and thought it had been bought at the Cheesecake Factory!

Turkey in a Smoker

Reviewed: Dec. 9, 2010
I cooked this for a Thanksgiving family get together and this was my first attempt at smoking a turkey and it turned out Fantastic! My husband even said that it was the best he had ever eaten including his Mom's! What a compliment!! I brined my 14.5 pound turkey for 18 hours in salt water and brown sugar, and then follwed the rest of the directions exactly. Because I brined mine though, apparently, it cooked really fast on 225 degrees. My turkey was ready in 7 hours. It had one of the pop up thermometers in it and it had popped but b/c this was my first attemp I was a little hesitant on taking it out of the smoker that soon since I had estimated 11 hours for it to cook per this recipe. But I'm glad I did take it out b/c it was Perfect and moist. Thanks for the great recipe! I'm making this again for Christmas!!
