Carrot Cake III

I made this for a birthday in my office. Everyone gave it rave reviews, and one guy even said I have a future in cake baking! I was kind of worried about it because it sank in a bit after I pulled it out of the oven, but it wasn't anything a little icing couldn't cover. I had also tried to make cupcakes with this recipe, but they also sank in, which is much harder to fix than cake. I don't think I'll be trying that again. But the cake was great!

Mary's Sugar Cookies

I absolutely detest making sugar cookies because I just don't like dealing with the mess, but these actually turned out pretty well. The only thing that I would criticize is that they tended to get much larger than I am used to with cookies, so the shapes I had used to cut them got pretty distorted. However, they did taste awesome, which is what really counts!

Texas Sheet Cake V

I doubled this recipe, and I'm pretty sure that I accidentally used 5 teaspoons of cocoa instead of 5 tablespoons, and I still got tons of compliments on this cake! It was excellent, and the frosting was soooo good, too!

Marble Cake I

This cake was so delicious. Everyone in my office loved it. It was extremely rich. The only thing I would have done differently is less flour. However, I was also trying to teach one of my friends how to make a cake, and he added the flour, so we can just blame that on him. Haha.

Classic Macaroni Salad

Ok, so this is delicious. I'm a poor college kid, so it was nice to be able to make something out of stuff that you typically just have laying around. I don't like peppers, and my carrots had gone bad, so I left those out. Also, I'm not big on onions and pepper, so I added half of the onion, and maybe about half of the pepper (I put it straight in the mix from the grater without measuring, so I'm not for sure). Oh, yeah, and I used rotini pasta. It definitely would have been better if it had more vegetables besides the celery and onion, but I still loved it. I've been craving macaroni salad for a week, and this definitely took care of that! Next time I might try adding broccoli or radishes, but we usually have some assortment of vegetables around my apartment, so it's nice to know that I'll be able to whip this up whenever I feel like it!

Vegetable Lo Mein Delight

This recipe rocks! My roommate and I just made this, and it was so tasty. We added more celery, substituted more broccoli for red peppers, and used a little less onion and mushroom, and we loved it. We used a regular pot since we don't have a wok, too. As a college kid that's really just learning to cook for herself, I love that this is easy and that you can add whatever vegetables you want. We'll definitely be doing this again.

this is wonderful!! my roommate and i are loving it, and neither of us are big on onions or tomatoes. i think next time i'll add less cayenne pepper though. too much of a kick for me, but still delicious! i'll definitely be using this recipe again.

Pineapple Upside-Down Cake II

Having never made a pineapple upside down cake before, I was a little nervous about this. It didn't say to use a two inch tall cake pan, so when the butter and pineapple juices started oozing out, causing smoke to pour out of my oven, I got pretty worried. But the guys at my boyfriend's frat house loved it, and I didn't think it was bad, myself. :) I'll definitely be using this in the future, but I think it will be ok without so many pineapple . . . that way my smoke alarm will stay quiet. :)
