Ok, so this is delicious. I'm a poor college kid, so it was nice to be able to make something out of stuff that you typically just have laying around. I don't like peppers, and my carrots had gone bad, so I left those out. Also, I'm not big on onions and pepper, so I added half of the onion, and maybe about half of the pepper (I put it straight in the mix from the grater without measuring, so I'm not for sure). Oh, yeah, and I used rotini pasta. It definitely would have been better if it had more vegetables besides the celery and onion, but I still loved it. I've been craving macaroni salad for a week, and this definitely took care of that! Next time I might try adding broccoli or radishes, but we usually have some assortment of vegetables around my apartment, so it's nice to know that I'll be able to whip this up whenever I feel like it!
