Ricotta Cake

Delicious and beautiful and easy to make! I used a bundt cake pan with half of the recipe for the ricotta portion, because that's what I had on hand. I filled the center to overflowing with sliced strawberries and dusted powdered sugar on top - it was stunning!

Quinoa with Veggies

Wonderful dish! Easily made with any veggies you have on hand. I used snap peas, carrots, green onion, frozen corn, green and orange bell peppers, and substituted two cups of chicken broth instead of water. It is definitely 1 cup quinoa to 2 cups liquid! Needs a bit more herbs and spices and salt, otherwise it can be a little bland. Don't overcook the quinoa! Keep an eye on it at the 18 minute mark and cook until al dente and the white germ is showing.

Great, simple recipe! I used a can of beef broth and water instead of bouillon cubes, about a half pound of ground turkey instead of all ground beef, added a tomato and minced cilantro into the meatballs and separately into the soup. Also added a little bit of salt and pepper to the meatballs. Came out beautifully!

Bran Flax Muffins

Oh my goodness, these muffins are amazing! I omitted the bran because I didn't have any and used 1 cup white flour, and 1 1/4 cup wheat flour, in addition to a 1/4 cup of almond meal and a handful of dried cranberries. If the batter is not moist enough, add a tiny bit more milk or oil. I also cut the sugar to 3/4 cup. These muffins don't rise very much, but they are delicious and satisfying, especially with a teaspoon of orange marmalade! Healthiest muffin I've ever made/ eaten!

Beefy Chinese Dumplings

I thought this recipe was not very traditional at first, since dumplings are typically made with pork and shrimp, but these were a hit! The most requested dumpling from my non-Asian friends, these make great pot-stickers. This recipe makes at least 125 dumplings, so scale back if needed. I like to make them with round dumpling skins, not the thin, square wonton type skins, and freeze them on a plate. When ready to cook, just take them out of the freezer and put them directly into a pan with about a tablespoon of oil and 3/4 to one cup of water. Cover and cook on med-high until water is mostly evaporated, then remove lid and fry on both sides until nice and crispy.
