Red Bean Salad with Feta and Peppers

Don't make this without having enough red peppers. Through some fluke I didn't have enough, and so just got by without having enough (I made the recipie for about 35 girls) and substituting in Roma tomatoes. The tomatoes were good in the recipie, but it really needs the red peppers. Otherwise the recipie goes over fairly well.

Tart Lemon Triangles

I made a large batch of these for my hall and they turned out fabulous! One thing to watch out is letting them get to thin in places in a large pan, they end up baking too hard and are difficult to get out of the pan and/or eat. Otherwise as a small batch, these would have turned out absolutly perfect! I have made these a few more times, and every time they turn out absolutly delicious. Not too tart, and not too sweet.

Spinach Tortellini Soup

I used vegetable broth rather than chicken broth becauase I'm a vegetarian, and it still tasted fine. I made sure to drain the thawed frozen spinach well before dumping it into the pot, and I added chopped carrots and some fresh tomatoes for additional flavor and to make it look nice. I had many compliments on this recipie. It's important to take the pot of the heat soon after the pasta has reached al dente, otherwise they'll fall apart and it won't taste as well. The leftovers the next day were good too.

Veggie Soup with Basil Sauce

This soup was pretty good, and could have been made with or without the tomato basil sauce, especially if bullion was added. It may have been because I was cooking for 50 girls, but the potatoes took quite a while to cook. A great recipe!

Minute Tomato Soup with Tortellini

This was one of the fastest, easiest and tastiest recipies I've used in a while. If the tortellini isn't left in for too long, it tastes wonderful. If you aren't big on spices, it also tastes fine without. I cooked this for about 35 people in my hall for lunch and everyone loved it, and someone else made it another day too. I highly reccommend this.

California Salad Bowl

Because I made a lot of this, it didn't go so fast, but everyone really loved the salad. Tastes good with or without the green olives, so if you don't like them make sure to leave them out. I mixed in a little of the dressing with th salad and place a bowl of more on the side and it worked well.

Absolutely Fabulous Portobello Mushroom Tortellini

This went together very fast. Don't cut the mushrooms too small, or they will dissapear in the sauce. I added some peas to this and it went well. If you make too much, it doesn't store very well. Many of the girls in my hall went back for seconds, but I can think of better ways to use the mushrooms.

Portobello Mushroom Pasta

I cooked this recipie for the girls in my scholarship hall for lunch today, and all I got were rave reviews. I reccomend adding a bit of either garlic salt or salt to the recipie to enhance the flavor of all the veggies. Pepper works well too. If I had made it for a small group of people, it would have been very quick.
