Crunchy Caramel Corn

My sister made a double batch of this and five of us -- two kids and three adults -- gobbled it up while watching TV. We all loved it, and it goes together as fast as the recipe states.

Orange Cake

Wonderful, easy cake. I followed earlier suggestions and used orange cake mix and orange pudding mix. I used slightly diluted frozen orange juice concentrate in the cake and the glaze for even more orange flavor. I also doubled the glaze, saving most of it to use as sauce on individual pieces of the cake. A hit at work. Next time I may add semisweet minimorsels, since I love the combination of orange and chocolate.

Lemonade Pie III

This is a fantastic pie. The only change I make is to use a crust made of crushed gingersnaps. Always a hit. Once when a friend and her family stayed with us, we were surprised to find that the second pie -- about a third of a pie -- was gone. My friend's husband had devoured it. "It was just one piece," he said. LOL!

The frosting is what makes this cake. You can substitute a bit of coffee liqueuer, 1 to 2 tablespoons (whatever it takes to making spreading consistency) for the coffee. Cake is nice with a dollop of whipped cream on it. Bites without frosting or whipped cream are just average. I usually go for deeper chocolate flavor. Don't freak out at the crackled crust on top when you pull it out of oven... icing covers it.

Chicken Tortilla Soup I

Everyone wants this recipe after they try aste the soup. It's easy and, even with all the canned vegetables, quite tasty. I use 2 cans of regular broth instead of the condensed, and use whole cans of corn and hominy. I also add a heaping tsp. of ground cumin and lime juice. As with many soups, even better the next day.

Salmon with Brown Sugar and Bourbon Glaze

I really liked this salmon, but my husband loved it. He wanted more sauce. Don't cut back on the bourbon, though, or the sugar in the sauce may make it harden up or even crystallize.

Broiled Tilapia Parmesan

This is an excellent recipe. I had no celery salt, so subbed a bit of garlic salt, and used Smart Balance instead of butter. It turned out fine. Next time I will try low-fat mayo. I only had a pound of fish because there are just two of us, but made the full amount of topping -- which was great on cooked cauliflower.

Big Soft Ginger Cookies

These are indeed awesome cookies. I did add almost a half cup of flour just to make it easier to form the dough into soft balls. I followed the excellent advice to drop the dough into the sugar and roll it there. The cookies are perfect in flavor and texture.

Darra's Famous Tuna Waldorf Salad Sandwich Filling

This is a refreshing change from regular tuna salad. To continue the Waldorf theme, I added 1/2 cup raisins and more walnuts. I cut the mustard by half and substituted brick for Swiss cheese to cater to my husband's tastes. To cut fat, I used water-packed tuna, used half mayo and half fat-free stuff and used soft sourdough rolls instead of croissants. Still quite good.

Lion House Wassail

Move over mulled cider. This has taken its place at our annual Christmas party. I used cider instead of apple juice, and used just 1 cup of lemon juice so it would be a little sweeter. It was a hit, and fun to serve something "steeped" in tradition. :)

Vegetable and Feta Latkes

These are as good as they sound, and worth the time (allow plenty since those veggies contain a lot of moisture). I added a quarter cup of matzo meal to make up for using large eggs, and added about a third of a cup of shredded onion as someone suggested. Perfect. Served them with a dollop of sour cream.

Gramma Brown's Corn Chowder

What a wonderful soup. I added the 4 ounces of Velveeta others recommended (even though it tasted darned good without it). To compensate a little for that added fat, I cooked the onions and celery in a bit of reserved bacon grease and later added cooked turkey bacon instead of regular bacon. This hearty soup is just as good or better the next day (it does thicken up overnight, which was fine with us).

Orange Cream Fudge

Wow. I tried this as a pre-holiday test (OK, we also had Orange Food Night at work) and it was a hit. Tastes just like a Dreamsicle or those orange push-up ice cream sticks from childhood. And easy, to boot.
