Smucker's Chicken Salad with Wild Rice, Pecans, Grapes and Orange Dressing

You can thin out the dressing by using vegetable stock. I reheated the chicken (already cooked and on hand from a previous recipe) in good vegetable stock, then added the dressing ingredient right in the bowl and mixed. I had to swap the orange marmalade for apricot preserves (also on hand) but I believe it lended the same fruity sweetness the recipe is after. Knowing rice will usually absorb the extra stock once it sits for a while, I made my mixture a tad bit soupy at first, but it ended up the exact right consistency. We had it warm for dinner, and I can't wait for it cold for lunch! Glad I made it!

Butterscotch Cookie Bars

wow - I really "goofed" these up and they STILL turned out yummy. I didn't let the butterscotch chips cool much before I added the eggs and vanilla - didn't matter. I upped the amount of flour to a scant over a cup, cut the sugar in half (both as per advice from others), left out the nuts and added some quick oats instead for texture and poured into an 8x8 pan for a cakier result. oh yes - and the chocolate chips melted after I added them into the still-warm batter. I'm giving it 5 stars for its versatility. How many other recipes can you goof up so much and still have it turn out yummy?? I'm adding vanilla ice cream to it for dessert tonight - and a drizzle of caramel sauce to make it truly decadent.

Cherry Tomato Corn Salad

I used Pampered Chef's new Chili Lime rub in place of the basil, and it gave the salad a nice little kick - the perfect complement. A GREAT salad for using up our current abundance of Sungold tomatoes. thanks!!

Blueberry Stuffed French Toast

I cut the recipe in half, used whole wheat bread, and added a lot more blueberries than called for (it's high blueberry season!), and baked for 50 minutes - still turned out delicious! No time to make compote - we served with blueberry syrup we had on hand, and maple syrup, too, as an option, along with some whipped cream. yummy!

Sicilian Brasciole a la Lena

made this recipe exactly as is; it was superb. In my opinion, it does not need any tinkering. Our grass-fed beef really shone in this recipe. EVERYONE loved it - my husband, my kids (3 & 4), my parents, and my brother and sister-in-law. Sauce was so good the leftovers were kept and put on noodles for lunch the next day! Now THAT's a good recipe! Thanks for sharing!! It'll be appearing often on our dinner table.

Peanut Butter and Banana Dog Biscuits

so flexible! I used 3 bananas I had frozen and then thawed, so I just kept adding a little more flour and some flax meal (per other suggestions) to better the consistency. The dogs devoured them. My two year old son helped - this is a great recipe for kids, and I didn't need to panic when he swiped a baked one to try along with the dog.

Venison and Wild Rice Stuffed Acorn Squash

This recipe is so flexible and very creative for venison - which is why I gave it 5 stars. You can easily alter this recipe to taste, and it still turns out great. Here is what I did: Per other reviews, I decided to cut out the butter entirely and double the rice, which was a rice blend with lentils. I added finely chopped mushrooms (portobella) - good addition - and used fresh cranberries cooked down a bit. I would skip the sugar, too, next time, because we also do not love sweet dishes for dinner, like another reviewer. I made a double batch easily. Thanks for a new idea for venison!
