Chicken Marsala Over White Rice

I just made this with a few adjustments for what I had on hand... I had leftover Jasimine rice, so I used that, just warmed it up and I did not have Marsala wine on hand so I used Chenin Blanc wine...this was SO delicious and my 12 year old asked me to make this a keeper, so I think I will continue to make it the same way. Very good!!!

Swiss Steak Quick and Easy

I made this dish last night and it was pretty good. Neither my daughter or I had ever had Swiss Steak but it is something that my hubby had once and requested I master (LOL). I made both noodles and mashed potatoes to see which we liked better and they both liked the noodles better but I didn't care either way. Here are the ways I changed it up though, and it worked for us... I deglazed the pan after browning the meat with beef broth and added about 1 cup because my hubby always likes extra "sauce". It was still really skimpy on sauce and I started to worry about the tomato to beef flavor ratio so I added 1 - 15 oz can of tomato sauce. It turned out great and my hubby and DD requested to have it again soon! :o)

Sausage Gravy

I wanted to make this for my husband even though it was something I had never liked. I followed this recipe but added the butter from "Bob's" recipe and it was wonderful. Even I liked it! :>)

Strawberry Pie II

I've made this recipe several times so far and my first time was for an Easter dessert. We love it! I did however make some adjustments. I added 4tbsp. of cornstarch & 1 tbsp. lemon juice as suggested by others and used 2 quarts of strawberries since I make deep dish pies. I didn't double the sugar or anything else - just also added 1 small box of instant strawberry jello. It's perfect.

Waikiki Cornbread

Wonderful and just what I was looking for. I used Martha White self-rising buttermilk cornmeal mix instead of buttermilk mix and left out the baking powder. I will be making this quite often since we like the "SWEET" cornbread. I also didn't grease the pan and only used pam and it worked wonderfully.

Banana Crumb Muffins

I made the recipe and loved it. My changes were that I doubled the recipe and added 1 tsp of vanilla after seeing some of the other reviews. It is wonderful! I made jumbo muffins instead, yeilding 12 jumbo muffins with the doubled recipe. They were done in the same amount of time as the recipe stated - 20 minutes - even though I was using the larger pans! :o)
