Danish Pastry

This recipe is somewhat complicated and probably not for the novice baker. But the result is out of this world. The directions are clear, easy to follow, and give a good idea of the amount of time needed.

Cream Cheese-Filled Coffeecake With Fruit Preserves and Crumble Topping

The cheese is the best part, I will propably make this again with a different batter. I always think coffeecake relies too much on the topping for flavor, so I always add a little cinnamon and nutmeg to the batter and I did one and half on the cheese filling with chocolate chips on one side and cherry preserves on the other. Note about preserves - the amount listed may not provide much flavor. I would suggest fruit instead, frozen, fresh, or re-hydrated. Ditto other's comments on the topping burning. The batter cooked up fine, but was so thick I had trouble getting it in the pan.

Santiago's Stuffed Squid

Fish Roll-Ups

I made a few changes based on what I had on hand: I substituted shrimp for crabmeat and water crackers for butter crackers. I put the raw onion, cooked shrimp, crackers, and spices in a food processor and puréed. I added about 1/2 cup white wine to make it moister and layered the stuffing on the filets. I poured about 1/2 cup of melted butter on top and baked. I don't suggest doing this unless you like a strong onion flavor. If not, better stick to recipe and precook the onions.

Absolutely Perfect Palak Paneer

Excellent recipe. The one modification I made was to skip the ricotta and use drained extra firm tofu. It was easy and makes the recipe acceptable for vegans and the lactose intolerant.

Kale and Quinoa Salad

I skipped the currants b/c I don't like fruit in my salad and I substituted pine nuts for pecans and garlic vinegar for balsamic. I took it to a pot luck and it was a big hit.
