Easy White Chili

I love reading reviews and incorporating a few changes along the way, and this turned out lovely (doubled the recipe). Used dried beans (soaked), added a lot of chili powder (maybe 1/4 C.) and Lawry's seasoning (2-3 Tbsp) while browning the turkey (the beans soaked up a lot of that flavor, so it even though it seemed heavily seasoned at the time, I knew it would eventually even out); also had added yellow and red bells as well as an onion, three cloves of garlic, and a jar of green chiles during turkey browning. I then added 1 jar of Salsa con Queso, a jar of medium salsa and a 8 oz bag Mexican 4 cheese blend. Added a little water to accommodate beans, but just played by ear. Corn bread muffins rounded things out, and it was a hit. Super easy and tasty!

1200 Calories the Delicious Way

The dinner was delicious. I'd scale it back by 1/2 if you have less than 4 people. The menu is easy to cut back even more calories if you want (i.e. no oj at breakfast). I would look over all the recipes before priniting out the shopping list. Many recipes call for some of the same ingredients and you likely can save a little money (use pita for tuna salad as well as an option for the hummus and skip the loaf of bread). The meringues didn't turn out for me, but I'd play with the recipe again. All in all pretty happy with the blend of food options.

Chicken Sherry

I'm not sure when describing a dish with condensed cream of chicken and mayonnaise that anyone would take you serious describing it as 'elegant', despite the sherry and nutmeg. I don't believe it would be all that difficult to come up with something similar from scratch, and I certain you'd end up with an immeasurably better outcome. I won't be making this again, and I'm pretty sure it will take a while to get my cooking cred back with my friends.

Braised Balsamic Chicken

Really tasty dish. I used a nice balsamic that a friend left (thank you Annie), and it was fantastic. I sauteed the onions first and set them aside after a mild carmelization. Then, after tenderizing my 3 large chicken breasts (that's what he said), browned those independently cooking about 2/3 through. After that, added back the onions and added the rest of the ingredients (subbing Homemade Italian Season I from allrecipes for the independent spices) and let it stew. The outer portion of the chicken absorbed the wet ingredients beautifully, so with the two extra breasts (I'm a bachelor), I chopped the remaining chicken and added it back, and am certain tomorrow will provide proof of tonight's happy marriage.

Balsamic Vinaigrette

Really tasty! I think you'd be fine to back off the olive oil a bit even, and maybe up the mustard by a tsp. (maybe that's a little too much...I'll have to play a bit). I'm hoping the flavors marry a bit with the extra that I have, but it's really good right away anyway...a win/win.

Sirloin Tips and Mushrooms

Seems like a half-done recipe. Really benefits from adding some thyme, and a bay leaf, and something to thicken the liquid, in my opinion (too soupy). After dinner I actually just added what was left of the mashed potatoes and the next day it tasted really great, but next time I make it I would add a Tbsp or two of flour after cooking the meat and before adding the tomatoes and mushrooms to get a thicker sauce

Oyster Stew

Very good base. A couple of changes I made was to add 1/4 tsp. baking soda dissolved in 1 tsp. water to prevent separation of butter and cream. Also added 1/2 C. cream sherry a bay leaf and a pinch or two of thyme. Going to let it sit for while, but a taste hints at awesome flavor.
