Vegetarian Korma

Way to bland! Also, veggies did not cook in specified times. To save this dish I added 1 can coconut milk, cayenne pepper, ground clove, turmeric, cinnamon, and lime juice. Cooked it down to desired consistency with lid off.

Joel's Jerk Chicken Pineapple Pasta

I made this to the recipe with the addition of 1/2 sliced fresh jalepeno and 1/2 red bell pepper chopped, and the juice of one lime at the end. Very Good! Yes, as others have said, reduce the cinnamon. I dont think the shredded coconut does much for the dish. Next time I will leave it out and add a half can of coconut milk and a tablespoon of hot red curry powder.

Grilled Chicken with Ginger and Black Bean Sauce

Just three stars for this one as it lacks some essentials. The second time around I added two tablespoons honey, about one quarter cup rice wine, and a pinch of red pepper flake. Much better.

Beef with Vegetables

Excellent! However, the "paste" method in step 2 is hard to handle. Add 1/4 cup rice wine and wisk, then add to pan to thicken the sauce. I also added 2 thinly sliced fresh jalapenos for "Jalapeno Beef", found in every Chinese restaurant, here in Texas anyway. Double up on the Garlic and Ginger too.

Chicken Kabobs Mexicana

Very, Very good! Even forgot the tomatoes.. still great! No need to marinate the chicken more than an hour. At one hour the acid in the lime juice had started to cook the chicken (can you say ceviche?.. can I spell it?). Resist the temptation to add garlic. I think it would detract from the clean flavors. The cumin, cilantro, lime juice combo is great. Brush your skewers with a little more olive oil and sprinkle a little more salt and pepper on the veggies before grilling. Serving on a bed of white rice rocks it!

Mango Salsa Salmon

Made this twice. Good the first time but lacked flavor and spice. Second time I seasoned my salmon with olive oil, Emeril's "Essence" and lime juice. Marinated one our them smoked in the Weber (about 30 min) with Cherry wood. to the salsa I added a pinch of red pepper flake and finished with a good squeeze of lime juice. Awesome! Recipe version still gets four stars as it is a great starting point.

Slow Cooker Chicken Mole

I don't get the raisins, unless they are just for authenticity. They are a distraction in the dish and make it too sweet. Checking around the web I do find one other chicken mole recipe that uses (just 1/4 cup) raisins. I will leave them out next time. Doubled the chipotele pepper and the heat is just right for most around here. Could go hotter. Next time I will omit the raisins, and pehaps add a tblsp brown sugar.
