Slow-Cooker Chicken Tortilla Soup

Reviewed: Jan. 25, 2010
This was very easy to make but the heat and spices we so overwhelming I had to dilute it to make it edible. My husband loves spicy food but this was over the top. I followed the recipe exactly as stated so I don't know what went wrong. I even made my own chicken stock for the base. The only thing that saved it was adding some salt, more cilantro and lime juice to cut back on the heat. Way too spicy for me and my daughter for sure. I will not make this again.

Baby Carrots And Brussels Sprouts Glazed With Brown Sugar and Pepper

Reviewed: Oct. 4, 2004
This is an outstanding recipe. My kids will now eat brussel sprouts. I will continue to make these veggies. The only thing that is absolutely necessary to follow is the reducing of the sauce. When putting the brussel sprouts and carrots into the sauce, the amount of liquid increases. So be sure to wait until it is reduced enough.

Easy Caramelized Onion Pork Chops

Reviewed: Feb. 13, 2004
This was a wonderful dish. My kids loved it, even my picky eater. I did make some changes based on previous reviews. After browning the chops I kept them warm in the oven while carmelizing the onions. I replaced the water with chicken broth and added more onions since they are so yummy and shrink down a bit. I also added 1 tbsp. brown sugar to the sauce to sweeten it up a bit and WOW. I added corn starch to thicken the sauce then smothered the chops and potatoes. My husband gave this dish the thumbs up. He is a gourmet cook and that means a ton to me!!!! Thanks Pamela

Spinach Stuffed Chicken Breasts

Reviewed: Jan. 8, 2004
This was wonderful. Even my picky 7 year old loved it. Very easy to prepare. Just make sure your chicken breasts are large enough to butterfly open. Mine weren't so I ended up with extra filling. Which isn't a BAD thing. :-)

Broiled Tilapia Parmesan

Reviewed: Sep. 18, 2002
Wow...My whole family loved this dish. My son told me I didn't make enough sauce since we used the extra to spread all over the fish and rice. This is a simple easy recipe that I will use again and again. I didn't have celery salt on hand so I substituded with celery seed and kosher salt. Very yummy!!!!

Caramelized Baked Chicken

Reviewed: Mar. 13, 2002
We all loved this recipe, especially the kids. However, I would be careful not to bake the chicken for the hour it suggests. Too well done and dry. But when it's moist and baked with the right amount of time it's WONDERFUL. Also, using chicken breasts is a good option.
