Hash Brown Sandwich

It sounds good, but to call it "breakfast-on-the-go?" I couldn't "go" anywhere until I'd washed the caboodle of pots and pans that it takes to prepare this.

EAGLE BRAND® Quick Chocolate Mousse

I made a mistake by using whipped topping, which is already sweetened--This made the mousse sickeningly sweet. So use real whipping cream that the recipe calls for, and I'm sure it'll be delicious.

Mom's Country Gravy

Any country girl knows that you use sausage drippings to make country gravy. Using plain oil is what we did when we didn't have the money for meat, and the gravy is bland this way. Use bacon, sausage, or ham drippings, and I suggest that you also crumble some sausage into the gravy, too.

Homesteader Cornbread

Fantastic--At last I found a recipe for good, crusty cornbread. I halved the recipe and cooked it in a preheated iron skillet. Since my corn meal was finely ground, I also used all corn meal and no flour. It was delicious.

Chicken with Garlic, Basil, and Parsley

This was so boring and very bland, but it is palatable if you shred the chicken breast, put it on split focaccia for a sandwich, add roasted red pepper strips, mozzarella cheese, and loads of garlic mayonnaise. Otherwise, you're wasting your chicken breasts because the flavors do not get into the meat, and you might as well eat your chicken tastelessly boiled.

Thai Peanut Dressing

This is delicious, easy, and just what I was looking for...However, you don't need the cornstarch or the first 2 tablespoons of water. Natural peanut butter will thicken the sauce on it's own in just a minute or two after your bring it to a simmer. Sometimes I add fresh cilantro and a squeeze of lemon juice, but it's delicious as it is.

Oatmeal Peanut Butter Cookies

These cookies were too cakey, and not sweet enough...bland really. These were the only cookies that I've ever made that stayed in our cookie jar long enough to get stale, because they're awful.
