Easy Guacamole

Reviewed: Jan. 11, 2011
Yum! Simple and delicious! I made this to have on its own and to out in a seven layer dip for a party... it was great both ways! I doubled the recipe and added a little garlic salt and a dollop of sour cream which helped the consistency a lot. Great recipe.

Cinnamon Rolls II

Reviewed: Jan. 23, 2011
Delicious! They were pretty easy to make, but took a long time to rise... I would ideally let them rise for 2-3 hours. I also added a sprinkle of extra sugar and cinnamon on top with some extra melted butter! Yum!

Baked Brie in Puff Pastry

Reviewed: Dec. 9, 2010
Delicious! I made this for a Christmas party and it was devoured! As per other suggestions, I froze the brie for 30 minutes to keep it from melting too much and I also added raspberry jam inside with the almonds and garnished with fresh raspberries on top. It was incredible and gobbled up by my guests! The puff pastry was difficult to work with and get to look pretty, but I think that could just be my lack of experience... Yum! Thanks!

Grandmother's Buttermilk Cornbread

Reviewed: Sep. 21, 2013
This recipe is SO good! The cornbread is so moist and flavorful, our dinner guests loved it and asked for the recipe! We served it with the "terrific turkey chili," which was also really amazing, and a lot of our guests put the cornbread into the chili and ate them together. Rave reviews and will definitely make again!

Easy Garlic and Rosemary Chicken

Reviewed: Jan. 27, 2011
Pretty tasty! I added quite a bit more lemon juice, some coarse sea salt and less rosemary (as per people's suggestions) and it came out great! It did take about 45 minutes in the oven rather than 25 as the chicken was pretty thick. Yum! Thanks! :)

Simple Scones

Reviewed: Sep. 15, 2011
This recipe was really easy and delicious!!! It would have been easier if I had a food processor, but even so, it did not take that long... I made a double batch and then split it into four bowls before adding the wet ingredients so I could add different kinds of mix-ins. I made a cheesy batch, a shredded coconut and almond, a chocolate chip, and a lemon batch. They are all tasty and I will definitely use this recipe again! Thank you! :)

Chocolate Cakes with Liquid Centers

Reviewed: Feb. 17, 2011
Delicious factor = 5 stars Ease to bake correctly = 4 I baked this twice and maybe our oven is just a little finicky, but they looked like complete soup after 7 or 8 minutes, so we left them in a couple 2-3 longer and they turned out great! I just had to keep a close eye on them as I over-baked them the first time and there was no liquid center. Used semi sweet instead, as my boyfriend does not like more bitter chocolate, and we had it with vanilla ice cream, fresh strawberries, and a nice tawny port. Yum! Thanks for the great recipe!

Seven Layer Taco Dip

Reviewed: Jan. 11, 2011
Delicious! I made this for a football party and it was happily devoured. I followed some suggestions and did a home-made guacamole layer instead of the vegetable and lettuce... yum! I should have used a slightly bigger dish to serve it in... a 9x13 would probably do the trick. Thanks!

Terrific Turkey Chili

Reviewed: Sep. 21, 2013
This recipe is SO good! I made it for a group of friends last night and it was a huge hit!!! Everyone loved it and some even ate it with the "grandma's cornbread" mixed in! I did change some things... as other reviewers have mentioned, I thought it helped to add a full can of tomato paste and some garlic. I also love beans in chili and decided to add one can of each pinto and black beans which really helped thicken out the chili! In addition, I added a full can of corn, a couple carrots, did just one larger zucchini, and did one red and one yellow bell pepper instead of the green. I am sure you could customize this recipe a lot and it would be just as delicious! It just depends on your preferences. I think this was one of the best chilis I have ever had and would highly recommend trying it! It was great for the party too because I made it early in the afternoon and let it simmer until guests arrived... it had a chance to develop the flavors a little more and made the timing of feeding everyone a snap! Served it up with the "grandma's cornbread" recipe, and some cheddar cheese, sour cream, and sliced green onions. YUM!!! Will definitely be making this again! Thanks :)

Simply Swordfish

Reviewed: Sep. 6, 2012
That was soooo good! And easy! I am not an expert chef, but this recipe made me seem like I was... I used the recommended 2 tbsp of lemon juice, a half tbsp of lemon/dill spice and a sprinkle of pepper, so a little less on the spice than the recipe said. It turned out incredible! I served it up next to some pasta with asparagus and a mango alfredo sauce, and a fresh summer artichoke! :) Incredible dinner, thank you for the recipe! I will definitely use this one again!

Apple Pie by Grandma Ople

Reviewed: Sep. 6, 2012
This pie was fantastic! If I could give it 4.5 I would... only problem was that things did not go perfectly, probably because this was my first time making a pie... The syrup overflowed out of the pie and into the over durning baking, causing part of our romantic evening to be spent sitting outside waiting for the smoke to clear out of our kitchen. I would thicken up the syrup a little with cornstarch and less water next time, to try to avoid spillage in the oven. I also added cinnamon to the mix and it added nice flavor. Very tasty and easy recipe, but I would make some adjustments to the filling amount and maybe follow some other recommendations to bake the whole time at a lower temperature. Perfect, tasty finish to any meal! Served it up with some vanilla ice cream, and my fiancee loved it! Thank you :)

Lemon Lover's Pound Cake

Reviewed: Apr. 6, 2012
Delicious cake! I followed other suggestions, and baked it longer at 325 instead of 350 and it was cooked through. It is much more of a cake than a pound cake though... fluffy and moist! Good for Spring :) Thank you!

Chicken and Pasta in a Mango Cream Sauce

Reviewed: Apr. 5, 2012
I ended up really LOVING this recipe, my boyfriend too :), but made quite a few alterations! I had eaten a similar dish at a tasty Italian place in Omaha, called Vivace's, and decided to try something similar at home. I used a yellow bell pepper, simply because I don't like green ones, and I used extra garlic salt, pepper and regular salt to pump up the flavor a little. Also, I baked my chicken at 350 degrees for around 30 minutes, then let it broil a little longer with a ton of jerk seasoning on it, while preparing the sauce, and then sliced it thinly and put it on top of the pasta after the grated parmesan. It was delicious! The kick of the jerk seasoning balanced the sweet and rich sauce SO well I thought. I also pureed half of the mango to put in with the cream, and diced the other half, which seemed to help integrate the flavor of the mango a little :) I will definitely make this again as it was a big hit with my boyfriend who loves tropical-inspired food. Thank you!

Veronica's Hot Spinach, Artichoke and Chile Dip

Reviewed: Nov. 29, 2011
Yum! I made this for a class potluck, and the class LOVED it! I served it with chips and would have been all gone had I not run out of chips. I followed some other recommendations and used mostly sour cream instead of mayo and added some minced garlic. I also tried adding some bread crumbs and shredded parmesan on top for some crunch! It was a nice texture addition, but I think I needed to leave it under the broiler a little longer at the end to get the cheese topping to melt. Yum! Will definitely make this again! :)

Balsamic Chicken

Reviewed: Sep. 13, 2011
This recipe is delicious! My boyfriend and I had this with a nice summer salad and some garlic bread and it was to die for! Once you pan fry it correctly... it took me two tries (I am not an expert) to get this right, having charred and burned the chicken the first time. The second time I kept a closer eye on the chicken to make sure it did not burn and lowered the heat on the burner... extra marinate in there seemed to make it burn faster. I almost wonder if it would be just as good and less complicated if you pan fried the chicken on its own to prevent burning extra marinade, and then add the sauce to coat it and bubble after...?

Garlic Cheddar Chicken

Reviewed: Jan. 23, 2011
This recipe was pretty easy and tasty! I added a little extra breadcrumbs under the chicken as people suggested and it helped it not get soggy. Thanks for the recipe! I will definitely try different variations of it again.

Addictive Pumpkin Muffins

Reviewed: Oct. 13, 2013
Delicious and super easy! A great classic Fall favorite! The recipe is very versatile for changes and additions too. A few changes... I used oil instead of applesauce, because that's what I had, and I also used half wheat flour and half all purpose, as well as splitting the sugar half white and half brown. They turned out delicious! I will definitely make these again! For an extra little sweet touch, just sprinkle brown sugar or raw sugar on top after they have baked for about 10 minutes... yum!
