Chicken Breasts with Balsamic Vinegar and Garlic
Delicious! Both of my kids devoured this dish. The 7 year old (who likes his food bland) did not care for the sauce, but the 4 year old loved it. The nice thing about this dish is that you can serve the chicken with or without sauce depending on the tastes of your table. I ate mine with both the sauce and mushrooms and it was wonderful! Also loved how easy and fast this dish was to prepare. I followed recipe except I didn't dredge in flour - seemed unnecessary. It was so yummy, I don't think it needs the flour coating (or the time and mess to apply it).

Marinated Pork Tenderloin
This recipe is so easy and delicious (and, I might add, budget friendly). I didn't have any sherry, so I did use apple cider vinegar instead, and cooked in oven at 375 for about 45 minutes (to cold to grill) but made no other changes and the pork loin was delicious. While it was cooking, it made the whole house smell wonderful. Yum! I can't wait to make it again and try to double the marinade to make a gravy, oh, and on the grill next time - yippee!

Rory's Most Wonderful Corn Bread
I love this cornbread! I have found that my batter is too thick to pour and so usually end up adding 1/4 cup of milk or so to thin it out, but other than that I follow this recipe to the letter. I think the sweeter the onion the better, too. Its a easy way to get a bit of green in to a toddler who thinks he is just eating bread!
