Chicken Enchiladas I

The hubby and I love this recipe! I took other reviewer's suggestions and omitted the water and tomato sauce entirely. I use hot salsa for the topping. It comes out delicious every time!!

Sausage and Rice Stuffed Peppers

This recipe is very tasty. I read the reviews and decided my first go I would stick to the recipe. I now can say...DON'T BOIL THE PEPPERS!!! I had issues with them collapsing but luckily ended up with only one splitting. I reduced the recipe to yield 4 (since there is only 2 of us) and I still had loads of extra stuffing. I put it in a little casserole dish and heated it up the following night for burrito filling..yummy!!!! I will definitely be making this one again and again!

Roasted Vegetable Medley

All I can say is WOW WOW WOW! I followed the recipe exactly except that the supermarket was out of asparagus so omitted that. Came back to the oven after the first 25 minutes and the veggies looked like they were burning! (Adjust temp down to about 180C for convection/fan assisted oven). I thought they were ruined but I carried on with the recipe, switching to my traditional oven to avoid any more browning. I only cooked 20 minutes more after adding the softer veggies. Served them warm and they were so delicious. I make them frequently now and since adjusting the temp they come out perfectly!

Delicious Black Bean Burritos

These are yummy!!!! I always end up adding a bit more cream cheese than the recipe calls for and they are wonderful. So easy to prepare as well. Fits right in my regular rotation!

Spicy Salmon with Caramelized Onions

This is by far our favorite salmon recipe to date. We do gravitate to spicy dishes but it truly works so well to balance out the salmon. This is so easy to prepare and so delicious I make it nearly every week!

Antipasto Salad

This recipe is brilliant. I followed it exactly except used spiral pasta and it was perfection, so tasty, so so yummy. The amount of dressing was perfect in my opinion. The following night I added some sliced cucumber (it needed to be used up) and the boyfriend loved it all the more (I don't eat cucumber). I did add a bit more dressing the 2nd night as it seemed to dry up just a bit. This will definitely become my staple pasta salad!

Balsamic Roasted Red Potatoes

Best potatoes ever, hands down. I don't normally use red potatoes as they don't seem to be as readily available here in the UK. I also leave out the nutmeg as my first go I didn't have any, tried it the second time and didn't feel it added much, if anything, to them. I use the recipe weekly and can't give it enough stars!!!

Better Than Sex Cake II

This cake got me serious points with the hubby's coworkers! I made this for them for New Year's Eve (since the poor lot had to work). It was gone in no time flat and everyone absolutely loved it. Too bad I didn't get to try it though! I followed the recipe exactly, substituting the caramel and whipped topping with the UK versions (carnation tinned caramel and bird's dream topping) which are just slightly different.
