Chipotle Crusted Pork Tenderloin
HOLY WOW BATMAN!!! First time ever cooking with Chipotle and we are HOOKED! I bought a tenderloin just to have a variety of meat in the house.. and I didn't know what the heck to do with it, so to ALLRECIPES I go! I find this, It's a complete experiment but what a HIT!! The fam can't handle the zip the way I can so the second time I made it I kicked it back to 2 1/2 TBS of Chipotle powder. It was fine. With the leftovers we sliced it up and made sandwiches out of it... This one is being put in the book forever!

Special Buttercream Frosting
This is the most non-nasty greasy mouth frosting recipe ever! I hate buttercream because it's like eating a stick of butter or a spoon full of crisco!! But this was really great!!!! I did take a lot of people's advice and did 1 cup shortening and 1 cup butter... I might do more 1 1/2 C butter and 1/2C shortening next time just to see if it would work.. Only because the thought of eating crisco nauseates me!!! I sifted the 8C flour and it came out 9 cups.. I only added 8 Cups after the sift and it was fine fine fine. I also only added about 4oz of the whipping cream just to ensure that it was stiff enough to not go anywhere. I did add a dash more of the vanilla too. Overall this is what I will use when I need to do a kids cake from now on!!

Cookie Jar Sugar Cookies
WOW! I HATE sugar cookies because they are so bland and card boardish... but this recipe is A.M.A.Z.I.N.G.!!! I read the reviews and did reduce the sour cream to 1/4 cup and refrigerated over night. When the dough came out of the fridge it was still pliable and easy to work with. I did not mix it like a cookie in a jar recipe so I didn't mix the sugar with the flour, I just added the sugar after the eggs butter and sour cream. Then added the dry ingredients. And Baked at 375 for only 10 minutes. They were soft and chewy with TONS of flavor! I already wrote this recipe down in my book! I suggest you do too!
