Yum Yum! Everyone in my family loved it! (Age 3-30!) ONly reason im not giving 5 stars is cause I felt I needed to tweak a lot... but EXCELLENT base recipe that you can change a little here and there each time. Keeps things interesting I think!
Heres how I did it---I followed the advice of others and let the milk soak in the corneal for a bit before adding the egg and then other ingrediants. I also subsituted butter for oil and half the flour as whole wheat flour. I decreased the sugar to just under a half cup and decreased baking powder to just under 2...After mixing all ingrediants the mixture seemed too thick so I winged it and added a little more milk and maybe a tblsp of veg oil. Next time I'm gonna try NOT soaking the cormeal and milk and see if this helps with the thickness of the mix.
I cooked in a butter Pam sprayed pyrex pie dish and it took 30 mins to get golden.
Great with butter on top or without.
