Glorious Sponge Cake

This has to be the best sponge cake recipe I've tried yet! Perfect texture! The only changes I mad was to substitute the lemon extract and zest with 1 tsp vanilla extract and 1 tsp almond extract. I didn't have lemon on hand but if i did, i'd use fresh lemon juice. DO NOT grease the pan! Because the cake is so light, it will not rise! If your cake turned rubbery, do not over mix the flour and egg yolk. Take care to gently fold the egg whites into the yolk mixture bit my bit. Watch the cake starting from 30 min. Mine started to brown at around 40 min and so I took it out just in time. I'd reduce the time to 35 min next time.

Spinach and Rice (Spanakorizo)

I followed the recipe exactly except I used 2 tbs tomato paste instead of tomato sauce. The dill taste was too strong almost overpowering and there was way too much olive oil. I served this with seared salmon. Feta and lemon are a MUST!

Rich Chocolate Frosting

I scaled this to 3 servings to frost a 8 x 9 inch tray of "MMMMM...Brownies" (also on this site). It was a generous amount of frosting. Love the creamy texture from the butter and the richness of using cocoa. I like my frostings less sweet and so I added the sugar slowly to taste. It spreads well so no need to add extra milk.

Basic Flaky Pie Crust

Used this crust for Grandma's Lemon Meringue Pie. Added 1 tbs sugar to give the crust some flavor. Ended up adding around 4 tbs ice water to get the dough into a ball. Make sure you add enough water so it won't crumble when rolling out. After wrapping with plastic, gently squeeze everything together. I rolled the dough between a sheet of wax paper and a piece of plastic wrap and didn't have problems at all. Perfectly flaky.

French Baguettes

I used 1 cup of sugar only and substituted 1/2 cup butter with applesauce. yumm!! healthy reduced fat option and perfect amount of sweetness. Iced with "Buttercream Icing", also from this site :)

MMMMM... Brownies

Yummm! Way better than the box! Sweet and chewy brownie! I used 1/2 cup dark chocolate chips and 1 cup semisweet. Canola oil instead of butter. 1/2 cup crushed walnuts. I didn't add icing as it is sweet enough as is.

Delicious Peanut Butter Cookies

Look no further for the best peanut butter cookie recipe! I personally prefer a crispier texture and used 3/4 cup white sugar and 1/2 cup light brown sugar. Also used 1/2 cup butter instead of shortening. yummmmmmmm!!!

Chocolate Cupcakes

These are the BEST cupcakes I've ever tasted! I followed the recipe exactly except I used buttermilk instead of milk. No need to increase butter. The batter will turn creamy after adding the eggs. They turned out very moist and super light! Almost like souffle in the middle and a little bit crisp on the outside. I topped them with vanilla frosting but they taste amazing on their own.

Chantal's New York Cheesecake

Great basic cheesecake! I halved the ingredients to make a small 6" cake. Baked at 160C for 25-30 min until the cake was wobbly in the center when tapped. I baked it with a water bath and sprayed the sides of the tin with PAM. If u spray the sides, the cake will simply lift itself out of the tin. No need to scrape the sides with a knife. My cake turned out with PERFECT edges, no browning, sinking nor cracking. For those of you the have trouble with water from the water bath seep into the foil, try lining the cake tin with a layer of parchment first. Topped this with Blueberry Sauce by Isybel, also from this site.

Marble Swirl Pound Cake

Followed reviewers advise and decreased the flour. I found the cake not dense enough to be a pound cake. it was more like the texture of a sponge cake. Still yum tho :)
