Chicken and Pasta in a Mango Cream Sauce
I made this dish for myself, but my picky boyfriend had some leftovers and we both loved it! My alterations: I began by rubbing my chicken with Cajun seasoning before grilling. I diced my onions and used red pepper instead of green, and powdered ginger to taste instead of fresh. I pureed part of the mango and added it in with the cream (I used half-and-half) and some extra parmesan. Added some cayenne pepper for spice. I also used linguine for my pasta. Light flavors but filling and delicious!

Debdoozie's Blue Ribbon Chili
Boyfriend and I loved it! My alterations: I used a big can (24 oz) of crushed tomatoes instead of tomato sauce. Used fresh minced garlic rather than garlic salt. We used 2/3 of a 16 ounce jar of Pace Hot Picante salsa and a generic brand of hot chili seasoning. Turned out great! Ate it as soup the first day, and then had it over hot dogs and baked potatoes later on in the week!

Cajun Roasted Pork Loin
Boyfriend and I both loved it, and made multiple meals! My alterations: I used green peppers instead of red because they are cheaper. I added carrots and potatoes to the veggies. I lightly coated all the veggies in olive oil, salt and pepper before putting them in the baking dish. Didn't have a roasting pan, but putting the roast surrounded by veggies in a baking pan worked fine. Didn't have ground mustard so I used spicy brown mustard, worked fine. I also made the chicken broth with a chicken bouillon cube and water. I added the extra cayenne because we like the spice. Everything turned out great!
