Sesame Tilapia

One of my alltime favorite recipes, and so easy to make. If you use the very thin, previously frozen filets they get a bit crispy around the edges when baked.

Mock Lemon Chiffon Cake

This recipe was just the thing for a show-stopping birthday cake that had both looks and flavor without being decadently chocolate. I followed the recipe hints of using lemon cake mix with vanilla pudding, and needed only 8 oz. of whipped topping as well, stirring in the milk only until reaching the desired consistency. The perfect cake for a summer party!

Chip Chicken Lollipops

These were a huge hit with the kids. I read through all the comments and made them with crushed Cheetos rather than chips. I cut the chicken breast into strips, threaded them on bamboo skewers, and dipped them in flour first to hold more of the flavor. (Of course I thought about making them someday for adults with jalapeno or Old Bay flavored chips and adding seasonings to the flour first.) This will definitely become a permanent part of my repertoire when feeding picky children something other than frozen chicken nuggets!

Quinoa with Peas and Parmesan

This was an awesome quinoa recipe - it DOES make a full 12 servings, though! After reading the recommendations, I followed the other readers' suggestions of doubling the tomatoes and peas, and adding some shredded carrots to the sauteed vegetables. I didn't think the coconut oil added any special flavor, though, so next time I'll probably make it with an oil lower in saturated fat. But definitely a keeper!

Coconut Banana Bread

I made this last night because I had bananas turning black, and it took almost all five of them for this recipe. I had all the other ingredients on hand except white baking chocolate (in hindsight I should have bought the white chocolate chips to speed the preparation process rather than trying to chop the squares). It's FANTASTIC. My boyfriend keeps referring to it as "banana cake" because of its rich flavor, and everyone at the office is loving it today. Still has a strong banana flavor (the coconut adds more texture than flavor) and I can't really taste the white chocolate personally. Easy to put together though, and makes two good-sized loaves. I'll keep this one!

Thai Ground Chicken Basil

Wow, this was delicious and a new favorite! I had to make a few substitutions since the store had no Thai chiles I used another person's suggestion and subbed 3 Tbsp Thai chile paste (sambal oelek). I also added some sliced baby bok choy and chopped red pepper before the basil, watering down the sauce with a tablespoon of water to allow the veggies to cook a bit. But otherwise I followed the recipe as written - peanut oil, 1/4 cup garlic, and all. I've been eating leftovers for lunch every day and looking forward to my meal!

Peppers Roasted with Garlic, Basil and Tomatoes

I made this last night as a healthy and low-carb side dish to spicy sloppy joes. I think I forgot the garlic but I did mix in some steamed asparagus tips with the tomatoes and basil, and used balsamic vinegar. It was a big hit, and much more filling than I had anticipated!

Deviled Eggs with Zip

I like things spicy, and was disappointed with these "devilish eggs." I made them again while ramping up the flavor ... I put everything into the yolk mix including Chinese mustard, boutique spicy mustard, jalapeno pepper juice, hot sauce, hot peppers, and a few powdered spices. This is a great recipe for experimenting with as I don't think anything can be done to make them too "zippy".

Crab Canapes

I made these for a party when looking for a fast and easy recipe using imitation crab meat. They got rave reviews although I found them somewhat bland. I used the flaky layer biscuit dough rather than puff pastry or crescent roll dough, and they went together fast. If I make them again, I might try seasoning generously with Old Bay and/or pepper before baking.

Sausage Cheese Balls

I made these for a recent party, bringing some trial samples over to my neighbor the day before and he walked in the door asking for them. They were tasty but difficult to remove from the baking sheet, even with greasing; the cheese and sausage sizzled and spread so much that a good portion of the balls were left attached to the foil I coated my baking sheets with. Still, they were easy to make and inexpensive, and probably preferred over the "ball" recipes I served at the party. I would try them again with low fat ingredients next time.

Mushroom Stuffing Balls

I made these for a party. I found them extraordinarily dry and bland, but they appealed greatly to some of the more finicky eaters among my guests. Probably a nice fallback vegetarian recipe for anyone without an adventurous palate.

Cavatapi with Chicken Ragu, Mozzarella and Basil

Certainly easy and edible, but not much flavor. I was disappointed in the lack of spice in the sauce (used Classico's brand) and should have added some crushed red pepper as it simmered. Could also have benefitted from some Italian seasonings with the browning chicken. Without the fresh basil it would have been a dud for me, but it was definitely a well-balanced, easy and inexpensive dinner.

Spicy Chicken-n-Cheese Balls

Wish I'd read all the reviews before I pre-made a double batch for my party (by the way, this makes about 5 dozen 1" balls!). I thought they were bland also and would have added more spices, but they were filling and not bad with salsa. I suppose I'll leave them for the guests who like blander foods and definitely NOT call them spicy, and will serve a variety of dipping sauces with them. I doubt I'll keep the recipe though!
