Spinach Tomato Tortellini

Very Yummy. After reading the reviews, I decided toI double the cheese, garlic and spinach. I also added one diced medium size fresh tomato. I wanted some protien so I sprinkled about 6-8 chicken tenderloins with some italian spices, garlic, and s&p and cooked them in a pan while I was cooking everything else. They were a nice addition on top of this dish. My boyfriend liked this dinner, even though he isnt the biggest fan of spinach. I have left over ingredients so I think I will try making a creamy mushroom sauce tonight!

Awesome Baked Sea Scallops

This turned out great!! a few adjustments.. but only because I was short on ingredients.... I only had Panko bread crumbs, which take forever to brown. I didnt want to overcook the scallops so I used finely crushed butter crackers. Also my garlic was green so I used garlic powder... I always use fresh, but this adjustment was just fine.

Pierogi Casserole

Yummo!!! I made this without bacon and double the onion!!!! I also added ranch dressing to my mashed potatoe mixture. This was so good with kielbasa. My hunny loved it.

Mouth-Watering Stuffed Mushrooms

I made some changes after making it once using the recipe exactly as is. A 5 star version would be: add 3/4 cup of crumbled blue cheese and 3 pieces of cooked bacon chopped to the mixture. To the topping add about a half cup of crushed cruchy onion topping (like Frenchs) and a few crumbles of bacon on each. I get rave reviews everytime I bring this places.
