Autumn Cheesecake

I've had this recipe saved in my box for 3 years now and finally made it for Thanksgiving this year. Overall it was good and my family enjoyed it, but not enough to make again. I thought the apple/cheesecake combo wasn't the best... I guess I'm more of a purist when it comes to cheesecake.

Molasses Cookies

This recipe is soooo fantastic!!! I used butter in place of margarine because I never use margarine, and orange juice in place of water like others suggested... definitely use the OJ! yummm!

Favorite Old Fashioned Gingerbread

Oh wow this is so soo yummy!!! I bake all the time, but this was my first time making gingerbread, and my dad who loves gingerbread raved about it! I doubled the spices, used white whole wheat flour, added 1/2 cup of applesauce. I can't stop eating it:)

Sandy's Chocolate Cake

This is BY FAR the best chocolate cake ever. My mom tasted a bite tonight, and after her eyes rolled back in her head said that this beat out her favorite chocolate cake recipe that she's had forever. The chocolate cake by itself was good, but with this frosting was transformed into the most amazing cake ever! I made it for my grandpa's 80th birthday party for 20 people. EVERYONE RAVED!:)

Peach Ice Cream

I can't stop eating it out of the ice cream machine, and it's not even done completely haha! The flavor is out of this world! It's like an explosion of sweet sugary peachy goodness with every bite. mmmmm! I scaled the serving size down to 11, and used half 2% milk and half half-and-half in place of all the cream. Excellent:)

Curried Chicken Tea Sandwiches

SO tasty! I cut back on the mayo by almost 1/2, and it was perfect. I also doubled the curry, added grapes, and left out the lime juice. This is by FAR the best chicken salad I have had! I can't stop eating it :)

Creamy Hot Cocoa

My dad and I couldn't stop saying YUM while drinking this!!! I LOVE hot cocoa and trying new recipes... this is my new favorite! I didn't even use the half and half at the end either. I love how rich and chocolatey the taste is, even with 2% milk. Thank you:)

Winter Energy Cookies

OH...YUM!!! These are BY FAR the best "health" / "trail mix" cookie I have tasted. I have been searching a long time for a recipe that will make me never want to buy bars again, and this one has blown me away. I couldn't stop eating the dough, haha! I used all spelt flour (LOVE the taste of it and it's so healthy!) and only half the amount of molasses because I ran out. The flavors are so complimentary to eachother. I tried lots of add-ins like chocolate chips, craisins, walnuts, pecans, golden raisins... YUM! Also, to 1/4 of the batch I added 1 small banana with walnuts. MMMM it tastes like REALLY GOOD flavorful banana bread!!! Thanks so much for a recipe that will be a forever favorite :)

Health Nut Blueberry Muffins

Man, what did I do wrong?? I was soo excited for these from all the good reviews, but the family and I didn't care for them. I decreased the sugar down to 1/2 cup as others suggested (used brown sugar), and used all spelt flour, so that could've been part of it. But I usually use spelt in everything and LOVE it. They were hardly sweet tasting too. I see good potential in this recipe. I might play around with it a little more, but definately not happy with the first batch :( I'm still giving them 4 stars even though we tossed the batch because I didn't follow the recipe to a T.

Banana Oatmeal Cookies I

I made these changes and they're SOOO yummy!!! My dad and I ate them out of the oven and they have wonderful flavor and texture. Half white half brown sugar, all butter, all spelt flour, 1 tea salt, 1/2 tea nutmeg (omit cloves), and double the cinnamon banana and oatmeal. I split the dough in half and added milk chocolate chips in one and walnuts in the other. The walnuts bunch won with the family by far. The texture of the cookies tastes like the center piece of banana bread, real soft and chewy, just how we like it:) UPDATE! I just made these again today for a family get together and they got RAVE reviews. My mom and grandma who try to stay away from cookies couldn't keep their hands off them, hehee! :) And the boys gobbled them up.

Honey Peanut Granola

I'm so-o excited! This is even better than the organic peanut butter granola I buy!!! I loved the peanuts in it. Crush them into coarse pieces before adding them. I divided one batch into three to try different things and I LOVED the peanut one... instead of peanuts I added crushed almonds to one and it was good but not too much flavor... lastly I added cinnamon and I didn't care for it. Stick with the original recipe, it's the best and I even love changing things usually!

Blueberry Cornmeal Muffins

Great muffins! I used half spelt flour & half white. I sprinkled a light layer of white sugar on the tops before putting the muffin tin in the oven, and I'm glad I did because it added a nice sweetness to a muffin that isn't overly sweet itself.

Chicken and Mandarin Oranges

Mmmmmm!!! This is great! I added a little sugar to the mandarin sauce to sweeten it up. I used noodles since I didn't have rice, and then added some of those crunchy sesame sticks for a yummy topping! I love how easy and tasty this is!

Best Ever Banana Bread

Ooh this is soo yummy! I didn't have buttermilk so I used plain yogurt. It had a very light, moist texture. I will definately reduce the amount of sugar next time to 1 cup instead of 1 1/2. It was a little too sweet, and I even like sweet! Excellant recipe, thank you!
