Banana Crumb Muffins

Best banana bread/muffin recipe I have ever used! I added 1 tsp vanilla extract, 1/4 tsp nutmeg and 1/2 tsp cinnamon to the mix, as well as cut down the white sugar to 1/2 cup and added 1/4 cup brown sugar to the mix, per other reviews. To bake as a loaf, I drop the oven temperature to 350 degrees and bake for approximately 50 minutes.

Delicious Ham and Potato Soup

Delicious and creamy! Love this recipe as a way to use up holiday leftovers! The only change I made was to not boil the ham with the potatoes; I did this the first time I made this soup and the ham tasted flavorless by the time I served it. I just added the ham in later in the cooking process the next time around. Yum!

Sophie's Zucchini Bread

Great way to use up that summer zucchini! I used 1/2 cup olive oil and 1/2 cup natural applesauce in place of the vegetable oil. I used 3/4 cup white sugar and 1 cup brown sugar in place of the white sugar called for. Throw in a cup of raisins if you like them! This made 3 medium loaves, baked at the same temp for approximately 50 minutes. Delicious as a breakfast bread or just a treat!

Mom's Zucchini Bread

Delicious, with a few modifications...in place of sugar, I used 1 cup brown sugar and 1 cup white sugar, in place of oil I used 1/2 cup olive oil and 1/2 cup natural applesauce. Doubled the zucchini and added 1 cup golden raisins and 1/2 tsp of nutmeg. First time making zucchini bread and I will definitely use this recipe again!

Slow-Cooker Barbecue Ribs

We used BBQ sauce in place of the ketchup and skipped the chili sauce. Cooked for 8 hours on low and the ribs fell off the bone as we took them out of the crock pot! My husband liked the ribs that cooked lower in the pot because they were covered in sauce all day and had more flavor. The ribs on top were still delicious but didn't have as much flavor and were a little dry. Next time we'll either make a lot more sauce to cover the whole rack of ribs or slow cook in the oven rather than the crock pot. Overall, a great recipe for a tasty and easy dinner!!

Slow-Cooker Chicken Tortilla Soup

This soup was sooooo good! I made a few modifications to the recipe though. I used shredded chicken leftover from a whole chicken I had made the night before, so I made this on my stovetop instead of the slower cooker. Used 4 cups of water for more broth (in place of water and broth the recipe calls for), added 4 chicken bullion cubes, a can of diced tomatoes instead of the whole tomatoes, and a can of black beans. I brought the soup to a boil and then let it simmer for two hours, and didn't put the corn and beans in until the last half hour of cooking time. I also used store bought tortilla chips crunched up over the top instead of making the strips myself. I also served flour tortillas on the side. I will definitely make this again!! We looked forward to the left overs the next night because it was that delicious!

Roast Sticky Chicken-Rotisserie Style

Overall a good recipe. Did one 5 pound chicken and had to turn up the oven to 375 degrees after 2 hours because the temp was not rising on the bird. The skin wasn't as crispy as I thought it would be, but I covered it with foil for the first 2 hours to prevent drying as other reviewers commented on. Used the leftover chicken in the "Slow Cooker Chicken Enchilada Soup" recipe on this site, and the spicy flavor of the chicken went well with this recipe. Expected more from so many 5 star reviews, but I would make this again with a few changes.

World's Best Lasagna

Best homemade lasagna recipe I've ever made. The taste rates up there with the lasagna from Olive Garden...seriously! My only critique is that it was a bit salty for my taste, and when I make this again (which my husband already told me I WILL make this again!), I will probably use a little less salt. Otherwise...delicious, and worth the effort!!
