Mary's Healthier Potatoes
These were really good. I cooked the potatoes in the microwave until firm; about 15 minutes. I made this recipe for 2 people and it said use 4 potatoes, but I used 2 and it was still too much for two people. I needed to cook it a lot longer than suggested, which really screwed up the meal I had planned because it would have all been done at the same time. Still, the potatoes had a really good flavor. My roommate wouldn't eat them because they weren't done all the way (got tired of waiting), but I will definitely make these again, and maybe try cooking them in the oven completely like another review suggested. I used nonfat cottage cheese and nonfat sour cream, and it was still good.

Chicken Pasta I
A very easy and delicious meal! I'm one of those people that rarely likes anything I make myself, but had be gushing! I even made it the next day for lunch. YUM! The second time I made it, I used sun-dried tomatoes instead of canned diced, and it was excellent! I will be doing it that way from now on. I think this recipe will make it's way into the meal schedule every week! I would consider this a heart-healthy recipe, as it doesn't much fat, cholesterol, or sodium. If you watch sodium consumption throughout the day, this will be a very healthy dinner. I added heart-healthy butter to the pasta after straining, and before adding spices and cheese--it was GREAT for coating the pasta in that yummy cheese! Kraft reduced-fat Parm is wonderful and nearly like eating air in regards to negative nutrition info.

Ranch Crispy Chicken
MMMM! I am a novice cook, but this recipe was so easy to prepare that my chicken tasted straight from a restaurant! I absolutely hate cooking meat because I can never get it perfect, and I rarely like my own meals even when everyone else loves them--but this was delicious! I used Italian breadcrumbs and a little more ranch mix. The bottom of the chicken was a little gooey, but I don't know what to do about that. It wasn't crispy in the general sense, but it gave the chicken a little crunch. I thought it was excellent, and will be making it again! My roommate loved it as well, and he didn't think he would because he hates ranch dressing.
