Suki's Spinach and Feta Pasta

I have been making this recipe for years! I just happened upon it today so I'll leave a rating. I will add roasted red peppers and marinated artichoke hearts sometimes also. However, when I add my spinach, I do it this way because otherwise it just turns into a shriveled mass of spinach ~ everything goes into the pasta pot, I toss it around good. The baby spinach then gets tossed in and filled in, and cover. The heat from the other items is enough to Wilt the spinach just enough and it stays in separated leaves.

Old Fashioned Creamy Rice Pudding

I have made this rice pudding MANY times! The only thing I do differently, is omit the raisins, temper the eggs, and use more vanilla and sugar. Sometimes after the pudding has set, I whip some heavy cream and fold it in. Heaven in a bowl!

Pesto Chicken Penne Casserole

This is such an awesome dish!!! I made my own Alfredo sauce, and used fire roasted tomatoes instead of crushed, and only half jar of pesto, and boneless skinless thighs. Everyone who tasted it loved it, including my son, who is a chef! It's almost gone, and I want to make some more now! Oh, I forgot, I thought I had bread crumbs, but didn't, so I just used just the parm on top.

Vegetarian Burrito Casserole

This is so so good! Everyone loved it! Only changes I made, and it was due to personal tastes was, used whole beans, canned chopped chilies, and ground turkey. I did use a 13 X 9 pan, can't see how it would work in the smaller 8 x 8. I will make this often. It's great for leftovers! i suggest having some lite sour cream on the side with this too. THANK YOU for a great recipe!!!

Honey Butter

The first time I made this, I made it to recipe. It was really, really good! The second time I made this, I added a splash of vanilla. Can I tell you how unbelievably awesome it is this way? I'm eating it on a heated snow roll right now with a cup of tea.... heavenly! I can't wait to have it on my sweet potato later on tonight! THANK YOU for an incredibly easy tasty recipe!

Cream Cheese Squares

If you don't have control of you self control, do not make these! I made these about 2 hours ago, and I've eaten about 1/4 of it! The cooler they get the better they are! I used the same amount of sugar, I only use butter, and I only used half of the butter called for. The way I made these, I would give it a 4 star. It's my own fault, I should have used all the butter called for. Regardless, these are spot on delicious! I can see I'm going to have to make these only once in a while. With these, I have no self control! MAKE THESE FANTASTIC SQUARES!

Slow Cooker Oatmeal

I loved this easy oatmeal recipe! It tastes so much better than the usual way. I used gluten free oatmeal, and had no problems with sticking. Love it topped with fresh fruit! I think next time I'll use a little less water and add some vanilla, and another time cinnamon and apple! Thanks for this yummy breakfast!

Fabulous Beef Tenderloin

I have just found my new way to prepare tenderloin! What an excellent way to watch the Patriots beating the Ravens! I may add some garlic to this the next time, but it is great just the way it is!! I didn't find it to salty, I actually a little to mine once it was sliced. Love the sauce for dipping! Thanks for such an easy tasty way to a great tasting tenderloin.

Banana Brown Sugar Pancakes

I've been making my own version of this for years. I butter the griddle, sprinkle nuts & then add brown sugar & pour the batter on top, then more brown sugar & nuts to the top of the batter. It turns into a melty gooey, delicious pancake!
