Suki's Spinach and Feta Pasta
I have been making this recipe for years! I just happened upon it today so I'll leave a rating. I will add roasted red peppers and marinated artichoke hearts sometimes also. However, when I add my spinach, I do it this way because otherwise it just turns into a shriveled mass of spinach ~ everything goes into the pasta pot, I toss it around good. The baby spinach then gets tossed in and filled in, and cover. The heat from the other items is enough to Wilt the spinach just enough and it stays in separated leaves.

Old Fashioned Creamy Rice Pudding
I have made this rice pudding MANY times! The only thing I do differently, is omit the raisins, temper the eggs, and use more vanilla and sugar. Sometimes after the pudding has set, I whip some heavy cream and fold it in. Heaven in a bowl!

Pesto Chicken Penne Casserole
This is such an awesome dish!!! I made my own Alfredo sauce, and used fire roasted tomatoes instead of crushed, and only half jar of pesto, and boneless skinless thighs. Everyone who tasted it loved it, including my son, who is a chef! It's almost gone, and I want to make some more now! Oh, I forgot, I thought I had bread crumbs, but didn't, so I just used just the parm on top.
