Honey Cornbread

Reviewed: Apr. 21, 2014
This is my favorite corn bread recipe, so far!! So many recipes out there, and I've tried a lot of them. I make the recipe with no alterations, and bake it in my cast iron skillet. I serve it with white chicken chili, and I never have leftovers! I serve it when company comes over, and they rave about it. Thanks, Tim L for the submission!

Juicy Roasted Chicken

Simple, tasty, wonderful. This is perfect with steamed veggies and sticky rice. I use butter, because margarine is not something I typically have on-hand.

All White Meat Meatloaf

Reviewed: Nov. 6, 2013
Oh. Yum. Just made this tonight. I almost made the mistake of skipping the glaze, due to laziness. It was SO delicious. Won't be making another turkey meatloaf besides this one. Great with mashed taters and mixed veggies.

Chocolate Cookie Buttercream Frosting

Reviewed: Feb. 25, 2013
Used this recipe specifically because I needed something quick and had all the ingredients in my pantry. It would not be enough frosting for a cake, but it covered my cupcakes. It involved no cooking, so I loved the ease and quickness of the recipe, and the flavor was great. I'll probably use this again.

Chicken Wings Pacifica

Reviewed: Feb. 19, 2013
Using this ingredient list, I prepared these differently as it was a last-minute meal. Instead of marinating, I baked the unseasoned wing segments on a wire rack over a baking pan (to keep them from sitting in their juices) while letting the sauce ingredients simmer on the stove. While simmering, I got creative and added two whole peeled garlic cloves, 2 Tablespoonfuls of chopped green onion, and about a third of a cup of orange juice concentrate. With about 20-minutes of baking time left on the wings, I brushed them with a coat of the sauce, then came back 10 minutes later and just dunked the wings into the sauce, then finished them off in the oven. Since the sauce was never used as a marinade, and it thickened up after simmering for 40 minutes, I drizzled it all over my steamed rice and broccoli and dipped my wings in it while eating. I WILL make this again and will most likely prepare it this way again. YUM!

Grilled Buffalo Wings

Reviewed: Dec. 20, 2012
This is the recipe I'm using from now on! We always grill. That's a given. The fact that I didn't have to marinate or rub the wings ahead of time is what made this recipe appealing. That I can do this with STILL FROZEN wings is even better. It's much less of a production when I get a hankering for hot wings. I had two concerns when I read the recipe. My first concern was that I was afraid the cola would take the "heat" out of the hot sauce. This was not the case at all. These were plenty hot! Second, I didn't know if I would feel good about using the simmering sauce as a final coat of sauce. But by the time my chicken was crisp and ready, the sauce had boiled for over an hour. There is no chance that any salmonella could survive that amount of heat for that long. Simmering the wings in the sauce adds a ton of depth to the flavor, and color as well. Recipes like this really take the fun out of going out eat for wings, because these are WAY better and less expensive than any restaurant!

OREO Turkey

Reviewed: Nov. 29, 2012
Tried these for my son's preschool Thanksgiving party. They were a HIT! A few helpful steps... I popped the tails into the refrigerator for around 5 minutes to help the chocolate set before trying to stand them up. I used double stuff Oreos, and the thickness of the filling helped hold the feathers up. I also used melted chocolate between the tail portion and the malted milk ball to help support the heavy tails. So easy and fun!

Chicken Tortilla Soup V

Reviewed: Jan. 26, 2012
Didn't have corn, but used black beans in place. The soup is good, but when garnished with ripe avocado slices, sour cream, and cilantro... there will be a party going on in your mouth. Loved this, and will make it again!

super sweet. I added walnuts, but they'd be even better with coconut. The possibilities are really endless... I can see these with dried cranberries and white chocolate chips, too... Will make these again!

Groovy Green Smoothie

Just got a Vitamix and this is our favorite green smoothie so far! I used just a splash of milk instead of the yogurt, since we didn't have any on hand. Still sweet enough, thanks to the apple and grapes!

Fresh Pear Bread

Love. I feel like a superstar when I serve it. I kept the pear pieces more chunky, for a rustic texture. Don't skip the walnuts. They balance the sweetness of the bread perfectly.

Tiny Chicken Turnovers

Followed others suggestions and added fresh garlic, used a pre-made pie crust, and added some shredded cheese (monterey jack/cheddar). Super great, and will probably make them again, with no other changes.

Coconut Chicken

Reviewed: Jan. 23, 2011
Love this chicken! I've made it 3 times now, and get great feedback from guests and family. Tonight I served it with white rice, stir fried broccoli and pineapple with a terryaki sauce. I also cheated and used 2 chicken gravy packets as a sauce instead of the suggested sauce. Thanks, katie!

Grandma's Chicken Noodle Soup

Reviewed: Nov. 15, 2010
Just so easy and good. Don't add any salt! Used "Better than Bullion" soup base and leftover rotisserie chicken. Added carrots, and used less cornstarch/water at the end. Just enough for my husband's lunch tomorrow after feeding 4 young kids and 2 adults.

Fajita Marinade I

Reviewed: Nov. 9, 2010
Used this on chicken, and it was a bright, tangy, delicious marinade. Aside from the cilantro, I had every ingredient in my pantry, so it was easy to throw together. The chicken was best served immediately after cooking.
