Thai-Style Peanut Sauce with Honey

Love this sauce. Use it on Thai chicken pizza, noodles, veggies. I now keep all the ingredients on hand to whip up a batch whenever I want. Thanks!

Didn't have corn, but used black beans in place. The soup is good, but when garnished with ripe avocado slices, sour cream, and cilantro... there will be a party going on in your mouth. Loved this, and will make it again!

Oatmeal and Everything Bars

super sweet. I added walnuts, but they'd be even better with coconut. The possibilities are really endless... I can see these with dried cranberries and white chocolate chips, too... Will make these again!

Groovy Green Smoothie

Just got a Vitamix and this is our favorite green smoothie so far! I used just a splash of milk instead of the yogurt, since we didn't have any on hand. Still sweet enough, thanks to the apple and grapes!

Perfect Baked Potato

Fresh Pear Bread

Love. I feel like a superstar when I serve it. I kept the pear pieces more chunky, for a rustic texture. Don't skip the walnuts. They balance the sweetness of the bread perfectly.

Tiny Chicken Turnovers

Followed others suggestions and added fresh garlic, used a pre-made pie crust, and added some shredded cheese (monterey jack/cheddar). Super great, and will probably make them again, with no other changes.

Coconut Chicken

Love this chicken! I've made it 3 times now, and get great feedback from guests and family. Tonight I served it with white rice, stir fried broccoli and pineapple with a terryaki sauce. I also cheated and used 2 chicken gravy packets as a sauce instead of the suggested sauce. Thanks, katie!

Grandma's Chicken Noodle Soup

Just so easy and good. Don't add any salt! Used "Better than Bullion" soup base and leftover rotisserie chicken. Added carrots, and used less cornstarch/water at the end. Just enough for my husband's lunch tomorrow after feeding 4 young kids and 2 adults.

Fajita Marinade I

Used this on chicken, and it was a bright, tangy, delicious marinade. Aside from the cilantro, I had every ingredient in my pantry, so it was easy to throw together. The chicken was best served immediately after cooking.

Raspberry Buttermilk Muffins

love these. I make my own buttermilk by adding 1 T of lemon juice to the warm milk. Added 1/4 cup sugar, 1 more egg, and a tsp. of vanilla as suggested, and they are great. Just had some this morning for breakfast!

Lemon Soup

Made this with rice instead of orzo. I added baked halibut and roasted asparagus I had leftover from the night before. SO GOOD, and so much healthier than a cream-based lemon soup I've used in the past...

Crispy Cheese Twists

I made these for a finger-foods function. Made as instructed, I thought these would be a bit too large and long. Instead of unfolding the puff pastry, I simply rolled the folded pastry to desired thickness, added the topping, cut about 24 thin strips, twisted and baked them. They fit well on a small plate, and doubling the recipe yielded quadruple the number of twists. I skipped the egg white, and didn't miss it.

Teriyaki Marinated Chicken

This is one to make for company!!!! So delicious. I used juice from a large can of pineapple chunks for the marinade, and pan-grilled the pineapple after cooking the chicken. Served over a bed of rice with steamed broccoli. I'm still floating after eating this last night!

Bruschetta I

Easy, delicious, and elegant. I added 2 tsp balsamic vinegar, as suggested by other reviewers. I brought the toast and tomato mixture to the table separately to allow diners to top their toast right before enjoying it. The leftover toast was able to be stored without getting soggy. I'll make this again and again!

Graham Cracker Crust I

The taste was great. Easy to make with ingredients on hand. My only suggestion would be to make sure you spread the crumbs out evenly. It was difficult to cut through thicker spots.

Creamy Au Gratin Potatoes

I microwaved the potatoes to cut down on baking time, sauteed diced onions in the butter for the roux, and cooked these in my toaster oven until they were bubbly and browning on top. So easy, and just the thing to warm the bones on a chilly Spring night. This is company-worthy!
