Peanutty Chocolate Fudge

Chicken Florentine Casserole

My husband made this over the weekend and it turned out fantastic. The cooking times were exact. Only changes were to substitute 2% milk for half&half and Smartbalance instead of butter. Delicious! Thank you for a great recipe.

Salsa Chicken

I modified slightly by using 2 jars of my favorite salsa (Desert Pepper Trading Co.© salsa -medium) and 3 chicken breasts (6 halves) and homemade taco seasoning. I loved this recipe. Served with basmati rice and fresh spinach cooked in olive oil and garlic. Thank you Faye.

Fiesta Stuffed Peppers

This was excellent. I used a mild jarred salsa (whole jar) and a cup of cooked rice. I was able to fill the 6 pepper halfs and make a small loaf which I served with the peppers. (I cooked loaf 15 minutes longer). I plan to make this a lot this summer. Thank you!

Oatmeal Raisin Cookies IV

Update to my original review (4/19) Second time I made this I substituted 1/2 of the butter with Smart Balance® and this was not a good idea. Cookies came out way too soft (tendency to fall apart when picking up) and had a sweeter flavor than original recipe. Looking forward to making a third time this weekend (using all butter) but will try dried cranberries instead of raisins. Excellent cookie. 4/19: "The Best!" I took the advice from one of the reviews and and added 1 tsp of baking soda and 1 tsp of baking powder because I feared a flat cookie. These came out picture perfect. I extended bake time an extra minute because I made them a little larger, but recipe still yielded 50 cookies. Excellent flavor. Thank you!

Easy Broccoli Quiche

Perfect flavor. Only change was that I only added 1/2 the amount of salt and pepper recipe called for. I found there was not enough of the egg mixture to cover broccoli or fill pan. I let the quiche sit for 5 minutes but it still did not set well for serving and fell apart when transfering to plate. I wonder if more eggs and less milk would help firm up quiche. Will definitely try again.

Slow Cooker Chili II

I thought this slow cooker chili was excellent. The only change I made was to substitute the liquid from the cans of kidney and cannellini beans (I did't care for the syrupy consistency) with a can of diced tomatoes. It was perfect! I served with Italian bread. Very hearty, healthy and satisfying! Thank you!

Chicken Tikka Masala

I really loved this recipe. I decided to cook the marinated chicken pieces in a skillet with a small amount of olive oil. After they were fully cooked and slightly browned on each side, I added them to the sauce. I did not need to double the sauce but I added 3 tsp of garam masala and omitted the salt. When I made the marinade I only used 1/4 tsp of cayenne which, to me, was the perfect amount of heat. I served this over basmati rice. Yakuta, thank you for a really wonderful recipe.

Pretty Chicken Marinade

Excellent flavor. I made this on Friday during a snow storm and rather than grill outside (hee-hee), I marinated the chicken for 2 hours, then added everything, marinade and all, to a baking dish, covered with aluminum foil and baked in a preheated 350 degree oven for 30 minutes. Half-way through I used a turkey baster to coat chicken and prevent from drying. After 30 minutes, I removed foil for 5 minutes to crisp top. It came out perfect. Thank you!

Slow Cooker Beef Stroganoff I

I took the advice of JILLYBEAN14's list of recommendations and it came out excellent. My only future change would be to try the recipe without (#7) the half-package of onion soup mix. I tasted these ingredients right away and, to me, it gave it an altogether different flavor than I'm used to with a beef stroganoff. Still, this is an excellent variation of the original recipe.

Best Brownies

Followed recipe as written with exception of a suggestion from reviewer who said to half the amount of powdered sugar and melt butter to allow frosting to spread easier, which worked great. I was disappointed in the texture and flavor though. I found these to be extremely dense (closer to fudge), intensely sweet and used way too much cocoa powder, which made them overwhelming in my opinion. Definitely not a subtle brownie.

Anise Biscotti

Everything about this recipe turned out colossal. The size of my biscotti, the size of the anise seeds I used and the flavor! Very good recipe, brings back childhood memories of Easter. Next time will shape loaves smaller and use mortar and pestle on seeds to try to incorporate seeds more into dough. Thank you Laria!

Glazed Meatloaf II

The first time.....I had a green pepper on hand and chopped it up and threw it in this recipe. This was not a good idea because it made the meatloaf too wet. I also incorporated all of the glaze into the meatloaf, rather than waiting until the end. This made the overall flavor too sweet. I'm giving it 5 stars because I made it a second time following the recipe as it is written and it came out lovely. Thank you Delia.

Spanish Chicken

My husband loved this! I found the flavors very interesting and the dish as a whole satisfying but next time I will try it without the cinnamon and cumin and up the chili powder to 1 1/4 teaspoons. The cheddar cheese combined with cinnamon and cumin was unusual to me. I prefer these spices in a curry, moussaka or a vegetable dish like ratatouille.

Grenadian Spice Cake

Beautiful flavor. I took Zakiah's advice and used evaporated milk and the cake had the perfect moisture on the inside. The outside came out a bit overdone. I adjusted the time to 70 minutes because I was using a bundt pan but this was way too long. I will try again and bake for 65 minutes for this type of pan. Excellent flavor. Thank you Holly.

Lemon Glazed Cake

I followed many who tried this recipe using a bundt pan but did not alter the bake time. This came out very good in flavor but the glaze was too thin. I omitted the water and had cooled the cake, but glaze was still too runny. Will make again but will try adding more confectioner's sugar.

Best Ever Cinnamon Buns

These came out ENORMOUS. Very good and easier than I expected. Wish I had halved recipe. Have a dozen or so taking up a lot of room in freezer! Was traveling over the weekend and stopped at a Cinnabon® to compare. VERY close in flavor. Would make again.

Chicken Breasts Stuffed with Perfection

This dish turned out fantastic. The only ingredient I omitted was the sun-dried tomatoes and I substituted italian bread for the wheat bread. I served with basmati rice. Truly delicious. Will make again. Update: 3/24/10 - I made this again over the weekend and my husband almost bit into a raw piece of chicken. Please, please cook this dish for about 40 minutes at 350 instead of only 25 minutes at 400.
