Restaurant-Style Buffalo Chicken Wings

Favorite wing recipe! I put the garlic powder in the flour and sprinkle the wings directly with pepper. I use margarine with the hot sauce and add a couple drops of tabasco - one of few recipes where I replace butter with margarine. I use a pastry brush to apply the sauce so the wings stay super crispy. The 60-90 minutes of rest time is critical.

Delicious Chicken Casserole

Very tasty. Changes: Used 2 boneless, skinless chicken breasts poached for 20 minutes - perfectly cooked. Used 2 cups rice and 1.5 cans cream of chicken - could have probably just used one can. Also sauteed half a minced onion in 1 Tbsp butter which I added to soup mixture. Used crushed garlic butter crutons for topping. And all fit well in 8X8 pan - 9x13 would have been 2 large.

Artichoke & Spinach Dip Restaurant Style

This recipe was a big hit with my family at Christmas. I used an 8 oz bar of cream cheese and Bertolli alfredo sauce. I very much enjoyed it but cannot decide if I favor it over another florentine artichoke dip on this site.

White Chocolate and Cranberry Cookies

I have used this recipe for years - it is a favorite and most requested. I have always used cognac because it's what I had on hand the first time I made them. The only alteration I make is to use 3/4 cup dried cranberries and 1 cup chips.

Ranch Pasta Salad

I've made this recipe a few times for BBQ's. I do not add olives because my family (not me) does not care for them. I use a refrigerated ranch found in the produce isle and do not use anywhere near 16 oz. I use half the cheese and dice it rather than shred. I also cook a few slices of bacon and chop them rather than using bacon bits.

Florentine Artichoke Dip

This is most requested for gatherings and I've made it many times. I have never changed a thing. Thanks for a great recipe! Leftovers (when there are any) go great on grilled chicken.

Summer Squash Casserole with Nuts

I was looking for something different to do with the squash from the garden and this was delicious. I made a few changes - I did not boil or mash the squash (we don't care for mushy veggies) but sauteed it in the butter to soften and added the onion and pepper in the last few minutes. I omitted the sugar, used light mayo and added garlic powder and just a touch of cayenne to the mixture. I topped with mozzarella (didn't have cheddar) and crushed caesar crutons. Rave reviews! Serves more like 5-6.

Chicken Enchiladas II

I found this recipe to be tasty enough but not 5 star - which was disappointing because I was really looking forward to it. I poached and shredded 2 chicken breasts and used cream of chicken because my husband doesn't like mushrooms and a shredded mexican cheese blend because I had it on hand - it made 5 large enchiladas which was more than enough, but the recipe is missing something. I might try taco seasoning in the sauce.
