Coconut-Curry Lentil Stew Served over Quinoa

Very tasty. I added chicken bouillon to give it more flavor. I bypassed the coconut powder because I didn't have any and used cinnamon powder instead of a cinnamon stick. I also added a bit more water as the beans cooked to keep it from drying out. Will definitely make again.

Honey Mustard Chicken

Great recipe. I used chicken legs. At first I excluded the curry because I couldn't picture it mixed with honey and duck sauce. But, when the chicken was almost done, I tasted it and felt like something was missing. I added curry and to my surprise, it made it so much better. I initially added a bit of salt and Goya Adobo seasoning to ensure the right amount of flavor I like. My picky 6 year old eater loved it, too.

Shrimpcargot

This was a hit at my dinner party. I did tweak it a bit after reading the reviews. I baked the mushrooms first for like 10 minutes while I cooked the shrimp. I also added some Goya Adobo seasoning over the shrimp and mushrooms, as I thought it needed more flavor. I also broiled it towards the end to brown the cheese.

This was very yummy. I added a lot more brown sugar and rice vinegar than the recipe called for, though, to taste more like the restaurants' teriyaki sauce.

Asparagus and Mozzarella Stuffed Chicken Breasts

I loved this. Simple ingredients. Easy to make. I did make some slight changes: I seasoned the chicken with Goya adobo seasoning and mashed some garlic to smear over the chicken. Gave it great flavor. I also made my own breadcrumbs using 3 slices of wholewheat bread. I seasoned the crumbs with a bit of salt, garlic powder, Italian seasoning, and Parmesan cheese. I also covered the baking dish with aluminum foil and added a generous amount of olive oil to the pan. It did not turn out dry at all. It was very juicy and flavorful. I didn't give it 5 stars because I tweaked the original recipe.

Oven-Baked Caramel French Toast

I made a few modifications I was happy with. First of all, I couldn't wait 8 hrs to prepare the meal, so I dipped the bread in the egg mixture and heated it on the skillet. The caramel sauce: I added some water to dissolve the sugar first. Then I added the corn syrup and the butter. I was much happier with the texture of the caramel. Yummy!

Banana Crumb Muffins

I'd give the banana muffins 5 stars. However, I took points off because of the topping. It looks divine. However, it was a bit too crispy for my taste. I was hoping for something more like Entennman's crumb cake topping. Next time I won't use brown sugar. I'm thinking about using powdered sugar and biscuit mix instead to soften it up just a tad.
