Grilled Montana Trout

Very tasty! Only changes I made: - sprayed the foil with non-stick baking spray before putting the fish on it to keep it from sticking - cooked on a propane grill at medium high heat for about 10 minutes w/o flipping it - I only had dried parsley, so used about 1/4 of what the recipe called for in fresh herbs. I think this could be increased because parsley has such a light flavor. This is my new favorite trout recipe! Flavorful but it doesn't overpower the fish.

Key Lime Cookies I

Light and refreshing! These are a nice balance of tart, sweet, crispy and chewy. I did make a few changes based partly on the other reviews and partly to make the cookies a smidge healthier :) I used 2 cups of flour (1 cup white, 1 cup white whole wheat). I also used 2 tbsp butter w/4 tbsp extra virgin olive oil in place of the 1/2 cup butter. (I had lemon flavored olive oil on hand so used 2tbsp of that and 2 tbsp unflavored.) Instead of the 1 cup of sugar, I used 2/3 cup sugar with Truvia as a substitute for the other 1/3 cup. I added 1/2 cup of white chocolate chips and skipped the powdered sugar on top. I think the sugar would be great, or maybe a powdered sugar w/lime glaze or cream cheese w/lime juice frosting. It is a cake-like batter, but I easily used two teaspoons to drop these on a cookie sheet. I don't have a pastry bag, but I think using one would give these a pretty shape.

Million Dollar Cookies

Love the taste and texture of these cookies. I used white chocolate chips instead of milk chocolate and they were great. I was able to make about 5 dozen good size cookies with the recipe for 3 dozen.

Spooky Halloween Eyeballs

Great recipe! This was my first time working with melted chocolate, so had a burning mishap with most of the white chocolate that I bought. I ended up making a few white chocolate ghosts, then a bunch of peanut butter balls covered with semi-sweet chocolate instead of the white chocolate. I used the balls as a base in a serving bowl and put the ghosts on top. They were all a hit! I found that freezing the peanut butter balls really helps to keep everything from melting together as you work. Also, be generous with the chocolate coating for easy handling. Enjoy!

Tofu Chocolate Pudding

Yum! I only had silken tofu, so used it instead of firm. I left out the water and soy milk because it seemed to blend up to the right consistency without them. I also used the Ghiradelli baking chips (60% cacao) that I had on hand, so added about 2 tbsp of light agave nectar for a little more sweetness. It tastes great- you would never know there is tofu hidden in there!
