Three Cheese Lasagna

I was really excited to try this recipe because it had such a high rating- made it for the superbowl! Unfortunately, there was way too much of the ricotta mixture and no where near enough sauce. Although my guests tried to be nice, I could tell it wasn't a favorite. Bummer! I followed the recipe to a T. With a few changes I could see it being good. In the "unadapted" version on allrecipes, it is rated much lower. Wish I had seen that before I made it!

Garbanzo Bean Chocolate Cake (Gluten Free!)

This was stinking delicious! I am not on a gluten restricted diet but just wanted to try. I made it for about 8 people and everyone loved it- NO ONE could guess what the secret ingredient was! I waited about 5 minutes to let them in on the secret...hehe. I used a 15.5 oz can of garbanzo beans- all other amounts the same. So. Delicious. Topped with a criss cross of Hersheys Syrup and powdered sugar. Even BETTER the next day, cold out of the fridge-might serve that way from now on. Definitely a keeper!!!

Shrimp and Feta Cheese Pasta

This was a delicious pasta! I hate when people rate based on their "changes" but after reading the reviews I did the following: Made 3/4 lb of pasta (only two people were eating, anyhow), used one can of diced tomatoes (not drained) and one chopped tomato, 1/2 cup of wine and fresh herbs. I also used 1/2 chicken and 1/2 shrimp. DELICIOUS! I will be making this one on a very regular basis! What a perfect summer pasta!

Holiday Brie en Croute

Amazing! I used black raspberry jam and it was the bomb! Didn't soften the cranberries at all, and served with water crackers. Everyone loved it!

Slow Cooker Split Pea Soup with Bacon and Hash Browns

Made as is (with the addition of some salt at the end)and it turned out great! I had fully cooked peas at the end and it really hit the spot tonight. Will be adding into our repertoire. Yum! Thanks for sharing!

Cuban Pork

This has become a regular at our house! We make the marinade as is with boneless pork chops. You might have to change the time, depending on the thickness of the meat, but it should be pretty self explanatory. What I wouldn't do is set the timer for each side of meat, but rather sit there and watch it. The pan juice is phenomenal. We serve with tostones and a rice/beans mixture. Pop on some traditional Cuban music on Pandora and you have an extra-great meal!

Delicious Ham and Potato Soup

Made this tonight for dinner and it's going to be my new go-to recipe for potato soup. I absolutely loved that there was no cream or cheese inside and the flavor was just so phenomenal and it was creamy. The only change I made was that I used 3 bouillon cubes instead of the bouillon granules, just because I didn't feel like measuring. That being said, I basically eyeball all my ingredients without measuring, haha. Definitely had a peppery taste to it, but I personally really like that. It will be back on the table in no time, especially with winter coming!
