Carrot Cake III

I added raisins to this cake and coconut to the frosting and I think that they were welcome additions to the recipe. This was really easy to make and it was very good but not out of this world. Still, I would not hesitate to make it again if I needed an easy carrot cake recipe.

Fried Rice Restaurant Style

Delicious. This is really versatile--I used asparagus, snow peas and ginger in mine along with 4 eggs fried omelet style in a separate pan. Can't go wrong with this recipe!

Pollo Fajitas

good with salsa and homemade tortillas. I added oregano and cumin, but could have still used more flavor. Still, it was easy to make and pretty tasty. The chicken turned out especially good.

Simple Roasted Butternut Squash

I liked this. I just peeled the squash with a vegetable peeler, removed the seeds, chopped it into chunks, seasoned it, and put it in the over. 45 minutes later, voila, dinner is served. However, I think that this squash could have really used some sweetener. It turned out well, but was not nearly as tasty as sweet potatoes prepared the same way would have been.

Irish Lamb Stew

I made this with venison instead of lamb and added 2 lbs. short ribs in place of beef broth. I simmered it for about 6 hours and it was out of this world delicious!

Fish Chowder

Great flavor. Be careful not to overcook the fish--I did, by about 8 minutes, and mine turned out rubbery. The flavor was delicious and and it was easy to make.

Apple Crisp II

This recipe is easy and affordable to make. It is very sweet and I found it slightly bland or one-note--cinnamon sugar, but still tasty. I think that this could be a real crowd pleaser for a potluck or something like that because it doesn't have any dairy, eggs, nuts or other ingredients that people tend to be allergic to or dislike.

Just like my favorite frozen meal, Amy's Organic's Matar Paneer. I used a kind of curry powder called Muchi Curry (there are lots of different curry powders, but that one seemed to work fine for this recipe). Delicious!

Donut Muffins

These turned out a little tough for my taste--maybe I was really looking forward to a more "donut-y" texture that just didn't happen. I used butter instead of margarine, so maybe that's where things went wrong. These were good, but not great--the base dough recipe is a little bland with the blandness covered up by slightly excessive nutmeg and cinnamon. They are easy to make, but I don't think that I would make them again.

Texas Sheet Cake V

Delicious. I used pecans, about 2 cups, in the frosting. Would be good to use nuts in the cake too. I also used King arthur baking chocolate (about 6 squares each) both in the batter and in the frosting in addition to the cocoa.

Sesame Pasta Chicken Salad

The flavor of the sauce was delicious and my family really enjoyed the salad but I wish the sauce had stuck to the noodles a bit better. It was a little watery and I was hoping for a thicker sauce that coated the noodles better.

Focaccia Bread

I'm in the camp of this recipes reviewers who agree that this recipe doesn't rise well. The idea and the flavors are good, but there must be something wrong with the directions. I have made some focaccias that turned out much better than this one did. Still, it made a tasty bread, even though it was dense and only partially risen.

Bean with Bacon

I guess that I didn't use enough bacon (I only used a third of a pound) and too many vegetables (I added 2 carrots and an extra stalk of celery, maybe not the best choice). The soup certainly turned out edible, but not as savory and delicious as I hoped it would be.
