Chicken Quesadillas

These were very good. However, I gave it only a 4 star because baking them didn't crisp the quesadilla enough for my liking. I was able to fit three of these on my baking sheet. I have a quesadilla press so I used that for the remaining items and to spruce up the three that I put in the oven and the results were very good. I topped them with homemade guacamole, homemade pico de gallo and sour cream.

Apple Cinnamon White Cake

This was good but a little bit dry for my taste. I like a moister cake. It was very easy to make but took a bit longer than the 30-40 minutes that the recipe called for. I had it almost an hour before my toothpick came out clean. I will make this again but I will try to add some shortening or oil to moisten it a bit more and I will add pecans to the top layer of apples. I drizzled a simple glaze on top to finish it off.

Slow Cooker Chicken Taco Soup

This was just okay. I added toppings such as shredded cheese, sour cream and tortilla strips. The beer was a bit overpowering. Also, the recipes calls for 3 whole skinless chicken breasts which I thought would be too much so I reduced it to 2 breasts. It was still way too much chicken for the amount of liquid that this recipe makes. i will definitely make it again but I will cut the chicken down even more, add extra corn and beans and cut the beer in half or eliminate it all together and add chicken broth in it's place.

Orzo and Chicken Stuffed Peppers

This was very good. I took the advice of a couple of other reviewers. First advice I took was to cook the pepper a bit first if you like a softer pepper. Second, I made the marsala sauce by review hunter blake. I actually sauteed the mushrooms and green onions per the recipe and added the marsala, chicken broth, milk and cornstarch to that. You will need more than a "pinch" of cornstarch if you like your sauce a bit thicker as a pinch leaves it very watery. I will make these again. It's a great option for using up your leftover chicken. Also, I had a lot of chicken/orzo mix left because I didn't have enough peppers so my son made a wrap out of it.

Wine Cookies (Original Italian)

I have been on the search for authentic Italian cookie recipes as I wanted to change things up this year by making an Italian cookie tray. Thing were going well up until now. These came together easily but when I opened up the oven door after the suggested 25 minutes, I then busted out laughing until my sides hurt all the while thinking, "OMG, I can't put these on a christmas tray." My husband walked in the door from work and heard me laughing hysterically and looked at the tray and immediately started laughing. They were bland and had no taste. I will try to salvage them by throwing some icing on them or something. I hope all of you who try this recipe have better luck than I did. I took a pic and added it to the picture gallery for this recipe.

Tater-Dipped Eggplant

These were sooo good. I was skeptical when I saw "potato flakes" but I tried it anyway. They were so good that we ate them like potato chips. They never did make it to the dinner table as an eggplant parmesan dinner. Be sure not to scimp on the butter and brown them well. They will come out cripsy and addicting.

Chewy Chocolate Chip Oatmeal Cookies

These have a very good texture and taste. They will please both the chocolate chip cookie lover and the oatmeal cookie lover as they are a cross between the two cookies. However, they are a bit sweet for my taste with the chocolate chips. I will definitely use this recipe again but I will put in the classic raisins instead of the chocolate chips.

Creole Crab and Corn Chowder

I agree with review number 3. The chowder is WAY too spicy and takes away the taste of the crab. I only used 3/4 of a jalapeno pepper and the rest green bell pepper and it was still too spicy to taste the $12 worth of crab meat that I put into the recipe. I will probably use this recipe again with several alterations of my own. The basics of the recipe is good, but unless you absolutely love a lot of spice, don't use the hot peppers.

Broccoli Salad

This is a very refreshing salad. For a twist, add some dried cranberries (craisins). It adds a perfect touch to the already delicious combination of ingredients.

Mushroom Turnovers

These were good. I don't like making dough because it's too much work but this wasn't bad. The second time I made them I took the easy way out and used refrigerated crescent rolls and they were equally good. I took the advice of another reviewer and used some minced garlic.

Cream Cheese Frosting II

PERFECTION! This is delicious. It's not too sweet and it has a great texture. I've made many cream cheese frosting recipes and have finally found THE ONE. This along with the carrot cake recipe submitted by Marc Boyer on this site are the perfect combination. Thank you Marc and Jannie.

Quick and Easy Alfredo Sauce

I didn't like this recipe at all. It was too cream-cheesy and stiff for my liking. I come from and italian family and this is nowhere near a true alfredo sauce. Others gave this a wonderful rating so I decided to try it since I love cream cheese and I didn't have any heavy cream for the "real thing". I will not make this again.

Slow-Cooker Chicken Tortilla Soup

My family didn't like this at all. If you follow the recipe as is, it's very bland and tasteless. Other reviewers added this and that and gave it a good rating but that makes it a whole different recipe. It was very watery and the homemade tortilla strips sogged up as soon as they were put into the bowl. I definitely will not make this again.

Basic Ham and Bean Soup

This was very tasty. I did as someone suggested and added a touch of liquid smoke. I also added a small amount of chopped fresh spinach. I do admit that after eating a bowl of it I could feel my arteries clogging. I refrigerated the rest and skimmed the fat off. It still was a bit fatty tasting but not as bad. Maybe next time i'll trim my ham hock better. Overall, it's a great tasting soup.

Pasta with Scallops, Zucchini, and Tomatoes

This was an OK recipe as it stands but needed more flavor. I made it a second time to see if I could spruce it up. It was awesome. I added 1/2 cup of white wine, 2 tablespoons butter, jumbo shrimp and little neck steamers (in their shells).

Italian Wedding Soup I

This soup is easy and delicious. I can never get my kids to eat greens but they do in this soup. Instead of escarole I use fresh cut-up or frozen cut-up spinach. I make 2 lbs of the meatbals instead of 1/2 and I freeze the rest in small bags of 50-60 balls. This makes this soup even quicker and easier to make. I also sometimes use acini pepe instead of orzo.
