Cream of Broccoli Soup I
Good recipe except I used cauliflower. I also used my own homemade chicken broth. Made the roux after sautee of onions and carrots with fresh crushed garlic cloves and fresh ground pepper. The nutmeg does make a big difference. Don't forget to use the hand submergiable blender (boat motor). Much easier than a counter top blender or food processor to clean up.

Cabbage Soup II
This is a very good recipe. I guess you could say we cut it in half and adapted to our taste. I used 1 lb of chopped smoked sausage that I sauteed with the onions, celery and carrots. Added 3 cans of chicken broth along with 1 can of cream of chicken soup along with approx 2 cups of water. We also added bay leaves and fresh basil along with fresh ground pepper and a bit of salt. This mixture simmered on low heat for about 30 - 45 minutes, stirring every couple of minutes. Added 1/2 large head of shredded cabbage and cooked until tender.

Italian Wedding Soup I
Instead of making meatballs for this soup as we have done in the past.... we doubled the serving size and used ground veal that was sauteed with finely minced onions, carrots, celery and freshly roasted garlic. This is a really good base recipe if you are a experienced cook and know how to mix the right seasonings. You do not HAVE TO HAVE meatballs for this type of soup. It is just extra work. Try using a mixture of ground beef and lightly seasoned ground sausage or a mixture of ground pork and ground beef. Experiment a little.
