Cream Cheese Penguins
OMGosh! I made these for Easter (along with dyed deviled eggs) and lined the outer edge of the plate with them. I set them on whipped cream cheese to make it look like snow. I got RAVE reviews on how adorable they were, and how each seemed to have his own "attitude!" Make sure you use Jumbo olives though, as I used Large and it made it pretty tedious. But worth the effort!!

Cowboy Mashed Potatoes
Love this (always have mixed my corn with mashed spuds anyhow when they're served separately). I used frozen mixed veggies, boiled to heat, then added them in AFTER I mashed the spuds so not to have them mashed up. I used small can of mild green chiles. Also agree with more garlic, & a little sour cream.

Broccoli Chicken Divan
I make something similar but use half broccoli and half cauliflower. I combine the juice of one lemon with 3/4 cup mayo, 1 can Cream of Chicken soup , 1 Can Cream of Mushroom soup, undiluted. I use 2-1/2 cups cubed chicken & cook in oil in lg pot, then add 1/4 cup white wine to deglaze, then add soup mixture & veggies. I put the cauliflower & broccoli florets in raw, but there's enuf sauce to cover them & cook for 1/2 hr - 45 min. in 13x9 casserole. I add cheese the last 5 min., serve over rice.
