Iced Pumpkin Cookies

These cookies are very good,...soft, fluffy, moist, subtle spices, and just enough pumpkin flavor. Texture was similar to a muffin top. I was attempting to get a denser consistency, so I baked the cookies for only about 12 min and substituted 1/2 of the white sugar with brown. Also, I used almost the whole 15oz can of pumpkin puree, which made the dough stickier to work with, but the end product still tasted great (although not dense like I was hoping). I uploaded 2 photos of the finished cookie, iced and not iced. For the iced ones, I dropped 1 tablespoon of the mixture and lightly flattened them. No spreading whatsoever...even the little "peaks" from dropping onto the sheet remained intact. So for subsequent batches, I smoothed the drops of dough with my fingers. The icing was way too sweet for me. For the un-iced ones, I flattened them with a sugared bottom cup. I liked the un-iced ones better...simple and basic in flavor.

Easy Lemon Cookies

I thought these were just okay. The good: great texture, very chewy, and practically no effort to make. The bad: couldn't get past the "fruit loops" taste from the boxed lemon mix even after I added 2T of pure lemon juice. Maybe I'll try a white cake mix and add lots of real lemon juice.

Raspberry and Almond Shortbread Thumbprints

Very easy cookie to make and the results are delicious. The dough was extremely easy to work with, no chilling necessary. I added the flour in 4 parts and mixed everything till just blended with a plain fork. The first time, I made them big...I used a tablespoon to measure out the dough and pressed out shallow centers down with my fingers till it made 1.75" size cookies. The next time, I used a teaspoon and pressed out a deeper center and ended up with 1" cookies. The smaller ones looked cuter, but they both tasted good. I didn't see any seedless preserves at my local Trader Joe's, so i just used seeded raspberry preserves. I used a non-insulated dark baking sheet and I had no problems with spreading. I did not make any of the icing. The cookies were crisp at first, but after sitting out for about an hour, the texture was softer. (I uploaded photos of the finished cookie).

Pumpkin Roll Supreme

This is festive for the holidays. The presentation and ease of making definitely deserves 5 stars. The taste is very good, but it didn't blow me away. I had never done any type of roll cake, and was pleasantly suprised that there were no problems rolling/unrolling the cake. I let the finished cake chill over night before tasting it. The cake was dense and had good pumpking flavor. I put a little pumpkin puree into the cream cheese filling. Most other roll cakes I've tried have a light, fluffy filling. The cream cheese filling was very good, but just a little too heavy for my taste. Next time, I will spread the cream cheese filling a little bit thinner.

Cream Cheese Frosting II

Nice and strong cream cheese flavor. I really wanted the cream cheese flavor to come through and I don't like sweet frostings, so I decreased the sugar by 1/4 cup. I absolutely loved it. I used this to frost some pumpkin cookies and it was perfect. I've posted a photo of the finished cookie.

Award Winning Soft Chocolate Chip Cookies

I love making these huge and thick. I use 1/4 cup drops of dough and leave them in the oven for 13:30 minutes. Cool completely. Everyone is always blown away at how wonderfully soft they taste and how perfect they look. The latest compliment was from a co-worker who said they were so perfect it was like they were genetically engineered!

Cream Puffs

These were sooooo delicious and impressive. i love buying cream puffs at the bakery, but these are so easy to make and taste even better. The shell is flaky and delicious, and the filling is so thick and creamy. This is a super easy way to impress your friends!
