Ready for Easter to get here so we can celebrate the annual wiener roast with the rest of family, looks like the weather will cooperate.  Several top-notch Mexican-themed meals from this week.  Slow Cooker Guisado Verde,< , 14 pts, makes my wife's top 5 list.  Like several others I substituted salsa verde for the canned tomatillos.  Mexican Salmon,< , 10 pts, was one of the best fish meals I have made in awhile.  Jicama Salad with Cilantro and Lime,< , 1 pt, is a nice crunchy side dish.  Might want to sprinkle on a little cayenne pepper for a taste kick.  Mexican Veggies with Queso,< , was very tasty.  Couldn't find chayote squash so just used more yellow squash.  First time I have tried the white Mexican cheese, really liked it, very similar to mozzarella.
