Two more good meals to report on.  Monday night I made Tomato Garbanzo Soup with Rice (http://allrecipes.com/Recipe/Tomato-Garbanzo-Soup-with-Rice/Detail.aspx< ) with a slight modification, black beans instead of garbanzo beans and mexican diced tomatoes.  I had to add 2 cups of water with the beans because all of the liquid was absorbed.  This soup was fairly spicy, might want to lighten up on the spices.  It was even better and more mellow the next day for lunch.  Only 2 pts so have another bowl.  Tonight made Slow Cooker Chicken Creole (http://allrecipes.com/Recipe/Slow-Cooker-Chicken-Creole/Detail.aspx< ), 4 pts.  This has an excellent flavor with just the right spice, unfortunately no leftovers for lunch.
