Despite the interesting food I had on my travels, it felt great to be back in the kitchen this weekend.  3 more winners to recommend.  Still in a Cajun mood so I made New Orleans Corn Bisque with Smoked Sausage.  The family isn't big fans of the smoked sausage, will use chopped ham instead… MORE

No cooking this week as I was travelling but it was a culinary bonanza.  Monday thru Wednesday I was in Baton Rouge, LA.  Feasted on Boiled Crawfish, Char-broiled Oysters, Raw Oysters, Pepper Jelly Shrimp, Shrimp Po-Boy, and Crawfish Nachos.  This was the first time I had eaten oysters, I… MORE

Time to settle in by the fire, 5" of snow and -15 degrees over the weekend.  Saturday night I made the Fennel Pork Chops.  We rated these some of the best pork chops we had eaten.  The fennel seed provides a wonderful taste and the wine simmer makes them very moist.  Highly recommend… MORE

What a week, I have been so busy I have fallen behind on my cooking reports.  Tuesday night we tried Erica's Delicious Slow Cooker Beef Roast.  I substituted Cream of Chicken for the Cream of Mushroom.  The gravy was good on the meat and mashed potatos.  Our main dislike was the sooup cooked… MORE

Two more wonderful lo-carb recipes to recommend.  Gorgonzola Stuffed Chicken Breasts Wrapped in Bacon, how can you ever go wrong when you got bacon.  Takes a little time but well worth it.  The cheese and shallots are fairly strong but in a good way.  I also fried the chicken for a couple of… MORE

Made 2 simple but excellent meals.  Have been sampling the low-carb selections since we are trying to lose a few pounds, the Spam meal from Wed night doesn't count.  Tuscan Chicken Simmer is very easy to make.  I cubed the chicken prior to cooking and the cream cheese - pesto sauce is… MORE

Tried Spam and Eggs tonight, amazingly wonderful.  We have only eaten Spam several times as a taste test so everyone was hesitant about trying it for a meal.  We have thought about having a Spam party since we toured the Spam Museum several years ago.  Word of warning for those haven't taken… MORE

Snowed for 1 1/2 days totaling around 8-12".  Not a big problem but wind expected to blow 25-35mph tonight which could mean a second day of no school for the kids. Made Creamy Chicken Bog with a Kick on Sunday.  Easy to make but takes a little time, perfect for a cold winter day.  Rest of… MORE

Out of Nashville before the snow hit.  Afraid they might lynch me for bringing it from South Dakota.  Had an interesting Grilled Mahi-Mahi over Pumpkin Ravioli at Darfons.  The Mahi was awesome, not so sure about the ravioli.  My wife made the Mexican Turkey Tortas tonight.  They were tasty. … MORE

Headed to Nashville tomorrow so no cooking until Friday.  Would prefer somewhere warmer but 40's are better than 20's.  Making Slow Cooker Chicken Taco Soup before I leave.  Prepared Basil Chicken over Angel Hair on Sunday, not bad but too dry for our liking.  Tonight's Sirloin, Pepper and… MORE

About Me
I am a mining engineer from Missouri. I am currently working as a sales engineer for a company that manufactures aggregate processing equipment. I love to cook and entertain for family and friends.
My favorite things to cook
I love to cook something new. I prefer slow cooker, soups and stews, and stove top meals.
My favorite family cooking traditions
Cookies have always been a mainstay for our family. When I am at my parents house we always stop working at 10am to eat cookies.
My cooking triumphs
For the last two years I have been one of the Gourmet Guys at the Friends of the Library fundraiser. I also won the company soup contest with a White Chicken Chili.
