Classic Tiramisu

I'm giving this 5 stars because the actual recipe (from the back of one brand of ladyfingers, which I lost)makes perfect tiramisu, but this copy has a few flaws. The recipe calls for 2 (3 oz.)packages of soft ladyfingers. (Not 12 oz.) You also whip the yolks and sugar together until lemon colored BEFORE you cook in top of double boiler. (Beating AFTER cooking AS Well does cool the mixture and helps it to incorporate into the cheese) I often make a "half-batch" of this layered in a bread/loaf pan using all of an 8oz. container of mascarpone cheese (as well as the full 1/3 cup liguor). A better size that's just right for the hubby and me.

Italian Sausage Tortellini Soup

This IS the BEST soup! If you like Italian sausage you will love this soup. I have served it several times to family, friends and even took it to work once- always with rave reviews and many requests for the recipe!

Flan II

So easy and so perfect! I wanted to make flan to go with a Mexican dinner, but didn't have condensed or evaporated milk, (which most of the flan recipes call for). I followed the recipe (adding NO vanilla) and both my husband and I thought the caramel flavoring was all it needed. I had no problem melting the sugar. Just remember to use only medium heat so it doesn't cook too fast. Thanks for a great, simple flan recipe!

Fried Onion Rings

These were the easiest onion rings I have ever made! Other recipes I have tried required beating eggs and so forth, yet didn't produce anything better than these. They fried up perfectly and were so light and crispy. I added a bit more salt and pepper, but that was all. My husband and I both loved them. We will be having these quite often!

Quick Quiche

Just what I was looking for! I used to have a "crustless quiche" recipe that used biscuit mix, which I don't always have on hand. This was just as easy and tasted great! Iused left-over ham in mine, but this is so adaptable you could put almost anything in it. Thanks so much for sharing!

Pastry Cream

This is the BEST! I rarely could make a pastry cream that didn't have at least a few "lumps" in it and I have tried several recipes, including my Mom's and grandmother's. This one was perfectly smooth and had a wonderful custard taste. I did fold in plain whipped cream for a lighter filling and used it in Cream Puffs and it was absolutely to die for! Thaks so much for this perfect recipe!

Poor Man's Shepherd's Pie

I had ground beef, mushroom soup, and brown rice and needed a recipe to use what I had on hand. PERFECT! Was so easy and the worchestershire and soy sauces gave it a lovely flavor. I did saute chopped regular onion with the beef and added a bit of garlic. I asked my husband if I should make it again and he said, "Definitely!"

Dorsey's Fried Oysters

My husband loves fried oysters and wanted them on Christmas Eve, but with everything else I had to do, I dreaded the batter-making and all. Then I found this recipe! Wonderful! He loved the flavor and I loved the convenience. (Oh, I loved the oysters, too!) Thank you for such an easy and tasty recipe!

Super Easy Doughnuts

I think the milk amount should be halved. This recipe is the one my grandmother, mother, and I have used for years, but mine takes the same amount of milk and vinegar, but DOUBLE the amount of everything else. Just use half the amount of milk and vinegar listed in this recipe and they will turn out fine. I have make this "half batch" of about 18 doughnuts many times.

Cornbread Muffins I

I LOVED these muffins! I have never cared much for cornbread, thinking it rather dry and bland, but these muffins won me over. So much sweeter, tastier and moister than any I have had before. I followed the recipe and mine raised beautifully and were moist on the inside while crunchy on the outside. I will definitely make these again. Thanks!

Microwave Lemon Curd

Absolutely wonderful! I couldn't believe how easy this was and how perfect! I'll never "buy" lemon curd again. I spooned it on anglefood cake and my husband was crazy about it. I saved some of it for scones I'm taking to a friend's home for a "British Tea" next week. Thanks so much for such a great recipe.

Microwave Oven Peanut Brittle

I have a Panasonic 1300 watt microwave and every time I have made this, the times listed in the recipe were right on! It has come out perfect for me every time. This candy is wonderful! I pour mine out onto a cookie sheet covered with that new "Release" non-stick foil and I don't even have to clean that pan. Everyone at work loved it and they all wanted the recipe!

Blueberry Buckle

GREAT! That's what my husband said when I asked him how it was! Definitely don't skimp on the berries! That's what makes it so moist. I did add a tsp. of vanilla and used butter instead of shortening, but I beat the batter with an electric mixer (up to the berries) and used all two cups of flour when I alternated the adding of the milk and flour. It raised beautifully in an 8x8 pan and the top crumb crust was lovely. I baked it for 45 min. Will DEFINITELY make this again! Thanks!

Carla's Fruit Dip

This is great! I made it for a party, served it with strawberries,cantelope,honeydew,and pineapple chunks, and everyone loved it! I,too, added 8 oz. of cream cheese and a little vanilla and it came out perfectly. I whipped the cream cheese first, then whipped in the marshmallow cream, then the whipped topping. Absolutely no little lumps of cream cheese. Yes.it made quite a lot, but no one in my family complained about HAVING to eat what was left over!

Simple White Cake

I loved this cake. It was easy and quick and just right for my husband and myself. When I bake a larger cake, we both end up eating too much of it! It had that wonderful "butter & egg" taste that only a "homemade" cake has. I will definitely make this again.

Fresh Blueberry Pie II
