Baked Tofu Bites

This is really delicious, although a bit salty. When making the marinade, I followed the advice of some of the previous reviews, and used half the proper amount of liquid smoke. To cut the saltiness, next time I think I'll use half the amount of soy sauce. I marinated the tofu for about an hour, setting aside the leftover marinade while baking. (Oh, I doubled the amount of sauce in order to have a good amount of marinade with which to work.) After baking, I added the tofu to the remainder of the sauce and warmed it all in a saucepan on the stove until the sauce was simmering and had coated the tofu. It was super tasty - even my husband, who is not a vegetarian, loved it!

PHILADELPHIA Pumpkin Swirl Cheesecake

I made this cheesecake for my dad's 60th birthday. I used a basic graham cracker crust instead of the pecan crust mentioned int he recipe. It was so good and so beautiful! I received quite a few compliments on this one. Thanks for the great recipe!

Cranberry Orange Loaf

Only added 1 tsp. of cinnamon. Otherwise I followed the directions exactly. Such a good way of using up leftover fresh cranberries from Thanksgiving! Yum!

Raspberry Oat Bars

These were delicious! The only thing I added was 1 tsp. of cinnamon to the crumble mixture. I advise cutting these into small-ish-sized cookies, because they're a little heavy in a larger size. However, these were my favorite holiday cookies that I made this year!

Butternut Squash and Turnip Soup

Great soup! I didn't have any celery on hand, so I substituted about 3 Tbs. of fresh parsley. (I know - a weird substitution, but it worked really well!) After cooking, I removed about 1/4 of the soup, then pureed the rest, and put the removed part of the soup back in. (That way there were a few chunks of veggies, but the smooth, creamy puree was still there.) Thanks!

Raspberry Walnut Baked Brie

Wow. What a great dish! I made this for a holiday cocktail party and received quite a few compliments. I made th4e recipe according to the directions, and didn't change anything. However I did make it ahead of time and refrigerated the dish for a few hours before baking. Also, for anyone wondering, I cut off the rind - for fear of others not liking the rind as much as I do - and the cheese was just fine. This was an excellent recipe that was easy/fast to make. Thanks!

Spinach and Mushroom Pinwheels

Made this recipe for a holiday cocktail party and it was a hit, even with mushroom-haters. It was a little time consuming, but I think it was totally worth it. I followed the recipe exactly; the only changes I made were to increase the spices and add black pepper. Thanks for a great recipe!

Homemade Black Bean Veggie Burgers

Great recipe! I've made these a few times now, and I follow the other reviewers' tips for how to get the burgers to stick together better (add another egg and 50% more breadcrumbs). I also add in a small can of yellow corn (patted dry), half a small can of green chilis (sometimes I use that instead of the bell pepper, if I don't have the bell pepper on hand), about a teaspoon of chipotle Cholula sauce, and about a half teaspoon or so of salt. I've made the recipe as-is, however, and it's great! Everything I do is just extra.

Mom's Cucumbers

These were fantastic - and that's a comment coming from someone who absolutely hates cucumbers! The only two things I did differently were to use rice vinegar instead of white vinegar (it's sweeter) and to use dill weed instead of celery seed. The dill was fantastic, but next time I might try the celery seed just to see what that's like. Thanks for the recipe!

Bold Vegan Chili

This was really great! My family and I enjoyed this immensely at dinner tonight (and I was the only vegetarian at he table). Even though it was so great, I'm only giving it four stars because I had to tweak it so much. However, I'd still say this was a great base vegetarian chili recipe. Here is what I changed: Added: 1 can diced tomatoes; 1 tsp. cumin; pinch red pepper flakes; 1 1/2 fresh parsley; 1 extra bay leaf; 1/2 tsp. more hot sauce; 1 Tbs. lime juice. Then, I did not add the extra 1 c. of water with the flour because the diced tomatoes already added extra liquid to the chili. Thanks for the recipe! :)

Coconut Rice

The flavor of this rice was great. However, as everyone has said, the liquid measurements are off. To fix this, I used the measurements and cooking instructions provided in another recipe on this site, "Asian Coconut Rice," by Silvrezs. Using those directions and the liquid measurements from that recipe, this came out wonderfully.

Herbed Chicken Nuggets

These came out perfectly. The only thing I did differently was add about 2 Tbs. of honey to the egg mixture to give the nuggets more flavor. Although I'm a vegetarian, everyone who ate these said they were delicious! Thanks for the easy, quick, and tasty recipe!

Salmon with Brown Sugar and Bourbon Glaze

My husband made this for Valentine's Day for us, and is making it again tonight for my birthday. This has become one of my favorite meals! He cooked the salmon exactly as described in the recipe, and everything came out really well. He used Jim Beam Red Stag bourbon (which has a cherry flavor), and the flavor was great!

Baked Honey Nut Chicken

This is my husbands favorite chicken recipe. He's the only meat-eater in the house (I'm a vegetarian), so I use half of all the ingredients to make smaller portions. The chicken comes out tender and delicious every time, according to anyone eating it, and it's super easy to make. Thanks for the recipe! :)

Addictive Sweet Potato Burritos

This sounds a bit weird, but my husband and I just finished eating these for supper, and any doubts we may have had are gone! Because it's just the two of us eating these, I used two cans of beans (1 can of kidney and 1 can of black beans), and I used two sweet potatoes. I used the same amount of garlic and onion, but for the spices I used 2 Tbs. chili powder, 2 tsp. cumin, 3 tsp. mustard, same amount of cayenne, and 2 Tbs. soy sauce. I also cut the water down to only 1 c. We made four burritos, and have some beans left over. Really, really delicious! What a great combination of flavors!
