Yum! Ditto to everything all the other reviewers have said! This recipe makes tasty, filling, nutritious muffins for any time of day. I made the following modifications which others may find helpful: 1) used 1 mashed ripe banana instead of egg 2) used 1/2 c skim milk instead of egg whites, as recommended by another reviewer and 3) live outside the US right now with no access to applesauce or apple butter, so I used pumpkin! Mine was fresh, roasted, but I think any sort of pumpkin butter, pumpkin puree, etc will give you the taste and consistency you are looking for. Wouldn't hurt to add cloves, nutmeg, and allspice for a little more zing. My only tiny recommendation for improving this recipe is reducing the number of raisins. I like raisins but I think 1/2 to 3/4 a cup would have sufficed.
